- Following up on my whipped feta recipe/video, I bring you another recipe to use up that container of feta. This one can be used as an appetizer, part of a charcuterie tray, or as a savory fat bomb. It's one of those recipes that looks and tastes like it required a lot more effort than it actually takes.

I LOVE that you are trying to use all the parts that are left over! My hubs calls me cheap when I do this, buy magically never complains when he is eating my "cheapness"!
Love the idea of sequenced recipes! I am a single guy so almost always have extra ingredients left over. And I move on... and then things go bad and I throw them out. I HATE wasting food. Sequenced good Keto recipes would make me feel very warm and fuzzy and save me a few $. I'll be buying that cookbook for sure.

I am on my way to the spice store right now to get zitar so I can make this. My son is half Greek and he and my granddaughters are coming for dinner Friday night so I plan to make this for him and the girls. It will be a wonderful new twist on feta which we all love! On another note I just purchased a dash egg bite maker. Whip up cottage cheese and eggs and add anything you like, I shredded gruyere and bacon and they are delish! My only complaint is it's too small but it sure is better than buying the crap Starbucks offers

Okay got my zitar and marinated the feta for 3 days. OMG it was fabulous. I took a lot of the marinade smashed up the feta and put it over konjak noodles and it was an outstanding meal. I'm waiting for sorghum noodles from Dr gundry can't wait to try it with those!

My fave international grocery store no longer carries my fave feta, but I’ll find a new source so I make this recipe and keep this on hand. We all love feta! This is destined to be a family favorite 🤩

I now get mine at Costco now a 1 lb container with lots of brine! I used to get mine at Trader Joe's for years probably the last 15 years and it was from Israel. The closest feta to Greece I could find, not this Athenos crumbly dry salty stuff. The real feta in Greece is kind of creamy almost like cream cheese. Anyhoo as does TJs the cost of the Israeli feta got too high so now they make their own and I just do not like it. Some people do but not me. I do like the one from Costco and it comes with 4 squares. I take one of the squares and put in a container with milk. It goes fast so it's ok, the milk doesn't spoil. Hope that helps.
@@barbaraeulayne Thank you! I’m used to buying imported feta from international stores-Turkish, Bulgarian, French-but I’ll certainly give Costco’s feta a try. I agree with you on those dry crumbles. Sticking a Greek name on the label doesn’t make it authentic 🤢
May I suggest using a firm feta so it holds together (rather than a creamier variety like French feta). This sounds delicious.

Saute fresh baby spinach, onion, cherry or grape tomatoes top this on keto flatbread and bake. Boboli was used but it is not keto. The flavors of the feta with the veggies is sooo tasty. Looking forward to your recipe sequencing cookbook.

You can never have too much feta!
I know fresh ground pepper is great. But you might want to consider trying Costco's Organic No Salt Seasoning in some of your recipes. It has seasoning from around the world. A lot of times I use that in place of pepper.

Recipe sequencing. I have never heard that term but it’s a concept I thought about last year. Because I want to make us an Indian recipes. But I don’t want to just do it one day because I have all the spices and other ingredients that are open and it would make more sense to do Indian for a week or two. In another week do Chinese. Another week do Japanese. I’m thinking that that is recipe sequencing. So thank you for the lesson.
I've purchased lots of specialty ingredients (especially spices) only to later wonder "what the heck is this for?". So I think that would be another handy reference section in an eventual cookbook - a glossary or cheat sheet listing which recipes use which ingredients, so that people can create their own sequences of meals.

It's the Dao Vua Leaf Spring Kiri Cleaver from Milk Street. I sharpen mine with a leather strop to the point that I can shave with it (tested on my leg, not my face).
I made it whipped Feta last week, it was delicious.
Lol I do the same, made ur dip, yum, then used some if the dip in an Alfredo sauce that I smothered my hearts of palm linguine! so good!
We’re definitely trying this Steve! Have you tried the baked feta with tomatoes? One of my favorite dinners my wife makes. She cooks the chicken breast on the side then bakes the feta/tomato recipe and then just spoon the mix over your chicken. Very good

My bro-in-law in Greece used to take a slab of feta and cut up little yellow and red hot peppers he had and then pour olive oil on top and seal in foil and bake. He and I were the only ones who would eat it since it was so flaming hot. Loved his peppers. Sop up with some bread and delish! The tomatoes are also delish! Will have to spoon over chicken next time! thx

Can't wait for your cookbook. I am single and have either ate the same food for a week or thrown out ingredients cause I can't figure out what to do with it. Due to delivery costs of groceries, I typically only shop once a month, so it's not like I can just buy some missing ingredient. Right now I have Gets on my list just to make the dip, that sounded solo delicious. Being able to add this new recipe is absolutely perfect ! Was holding my breath when you cut open the bag-was cringing at the cleanup if it spilled onto the counter and dripped on the floor !! (Something that'd happen to me for sure). Love kalamata olives even if I spell it wrong !! You're making me hungry !!!
Hey Steve, what a great idea for a cookbook, too many cookbooks lead you to buy ingredients that you then end up not using, so recipe cycling would be fantastic! Keep up the great work my friend!

Enter Zatar (insert applause here) .. my husband is from Syria .. and his mama is 101 years old and still making her own zatar .. I just sprinkle zatar on my feta .. it’s amazing .. but I’m gonna try this recipe ..my grandchildren grew up on zatar rolls.. hot pita sprinkled with olive oil and zatar… roll up and run around the house giggling like a toddler and eating your zatar roll …(btw it also is delish sprinkled on mashed cauliflower ) 😉.. you’re welcome

Another great looking recipe! What brand of vacuum sealer did you use? I vacuum seal with the machine listed in your Amazon store. But, often the seal is often unreliable and find anything with liquid is difficult.
Can I just say...your son really rocks that 'teenage dude' attitude. lol. I enjoy it! This sounds like a great recipe, other than the hot pepper for me personally.

This looks amazing. I am a huge cheese fan. I have a video idea/request. I am wondering if there are insulin spikes from using extracts that have been processed with a little alcohol. I am interested in learning which are keto safe. For example, almond, vanilla, orange, maple, chocolate extracts. I'll bet cooking cooks off any residual alcohol, but what about using them where there is no heat involved. I meant to ask this many months ago and if they are taboo now I understand. Or maybe a family member would agree to do the blood glucose tests...??
I've never had an issue with them, but I'm also not a diabetic.

Yes, but it also keeps it from becoming overly marinated. I just take it out of the fridge a half hour or so before I plan on eating it.
you should mash it to a creamy consistency and use as a spread. In Greece, this is a version of a dish called "Tirokafteri", a type of appetizer with pita bread.
I'm sure that would taste great as well.
My marinated feta is very popular but the recipe feta starts "first milk your cow..."🤣

You could make preserved lemons and use them. They last for a year in a jar. Preserved lemons are used all over the Middle East in cooking.

You could really do it with any cheese. I don't think the texture of paneer would allow it to absorb much of the marinade though.

UA-cam is all over the place with how they present your videos to me. I know this was a year ago but do you have that cookbook already written? And is it out yet?
The challenge is finding the time and software skills to put a cookbook together (or the money to pay someone). Also in speaking with some other content creators who have made cookbooks, they recommend self publishing, as publishers will make requests like 80% of the recipes need to be "new" and not already have a video or be on my website.

Excellent marinated feta cheese cubes which would take a feta cheese focaccia to the next level; marination in an infused oil such as garlic, 🌿 Rosemarie, lemon would also be nice; your recipes make us creative.
Have you read anything about high protein keto? I’m part of a Facebook group that pushes high protein lower fat keto. They encourage no more than 80 grams of fat, which makes it very difficult to eat things like this or your whipped feta. I’m not 100% sure if the high protein keto is best because I struggle with being regular when I do it. I would love to hear your take on this.
That’s not how I choose to do keto.
When you are trying to sort through the information about keto-who or what is your go to resource? This is long term for me. I’m 17 months in. I’ve lost 104 pounds. I’d like to lose another 24 pounds. There is so much information out there and I’m not sure who to listen to. I want to lose weight, but I also want to be healthy and this is my WOE for life. Would love your thoughts. Dr. Berg says don’t count your green veggies carbs. This keto Facebook page says you should. Dr. Ken Berry promotes carnivore - which I can’t do because I feel awful when I don’t eat my veggies.

I’m on the homestretch and would love some advice from someone who had reached their goal.
I believe the "right" way to do keto is the way that is sustainable, affordable and fits into your lifestyle. That differs for each individual, which is why I don't give much in the way of advice beyond that. There are far too many dogmatic people in the keto world, which creates confusion and frustration.
I quit tracking my macros after about a year on keto. I can "eyeball" how much to eat in the way of carbs on any given day and have only been out of ketosis 4 or 5 times in three years - all by choice. I eat until I'm satisfied. If I eat until I'm full, then it happened because I "overshot". I don't like feeling full.
This looks so wonderful. I was in Vegas recently and we ate it Fogo de Chao and they had a marinated feta that was absolutely to die for. I hope this is going to taste like that!
