INGREDIENTS:
potatoes 400 gms
chicken breast 300 gms
tomato 1 no
onion 1 no
parsley or coriander leaves - to garnish
oregano 1/4 tea spoon
salt 1/2 teas spoon to marinate chicken
black pepper powder 1 teaspoon to marinate chicken
oil - to fry fries
butter 10 gms cook the chicken
butter 10 gms for cheese sauce
flour or maida 10 gms
cooking cream or milk 1 cup
salt and pepper 1/4 teaspoon each for cheese sauce
cheese of your choice 1 cup
smoked paprika or ksahmiri chilly powder 1/2 teaspoon
corn starch 1 cup
GARLIC SAUCE INGREDIENTS:
egg 1 no
garlic 6 no's
sunflower oil 1 cup
salt and pepper 11/4 teaspoon each
vinegar 1/2 tbl spoon or half lemon juice

Your definition of blanching is totally different from what I originally thought. For me, blanching means to put vegetables in boiling water or steam for a short time which is typically followed by quick, thorough cooling in very cold or ice water.
You are right but When you make the French fries this process is also called blanching instead of water it will cook in oil for short time and cook it immediately are you chef too it seems like you know some of the culinary terms and thanks for sharing your thoughts

I recommend it to use it right away but you can keep it in the fidge for two to three days but before use it ad some cream or milk to thin it as it get thick in the fridge

Cheese sauce always make it fresh is the best option but if you can keep in the fridge for a week depending on the temperature settings in there and once you use it you have to add more cream or milk and heat it up to get hay desired pouring consistency hope I answered your question 😀
