So, I have been making this recipe for a while, but instead of cottage cheese, I use Ricotta and Feta cheese, mix in the eggs, black pepper, red pepper, bake and viola. It is super simple and it's so delish. Switching out the ricotta saves carbs too. You can make sweet and savory versions.
What I have done is, besides the cottage cheese and the eggs, I added just an 1/8 of a cup of almond flour, a teaspoon of baking powder and 1/2 teaspoon of Xantham gum, just to give it elasticity. It turned out so good.
All the good UA-cam keto channels advertise LMNT. Just fast forward through it. I take Supper supplements/vitamin shop brand multimineral tablets with iron for electrolytes. Taking a tablet means it's more cost effective and you don't taste anything. I don't need and and don't prefer the amount of sodium in many electrolyte powders. I find I do need potassium but the salt from food is enough.
I've made this a lot and it does break easily, I've also added a little bit of gelatin powder and that does help a bit too to make it more pliable. Unfortunately I am violently allergic to Parmesan/ asiago but I can eat all other cheeses so I wonder which one would work best. Maybe mozzarella like in fathead dough?

@@shelleyn.8503 no- but the edge taste good for pizza, I leave it on for that, cheese over it. Pizza is my nirvana. There is one recipe I like more for that, but this one tasted good. I added coconut flour to the original recipe, did what the dry cheese does. I like this better, with one tablespoon coconut flour, and the same cheese. 🧀

I was assuming the baked product would make more than one wrap, and I was waiting to see how you would cut it up. I was surprised to see it used to make a single serving -- or that's what it looked like.

I take a 1/8 teaspoon of Celtic Sea Salt every morning & follow with a giant glass of water. I also drink electrolytes all day.

I like to add 2TBSP nutritional yeast.
It also adds a cheesy taste and needed thiamine.
But now I’ll also add the parm. Sounds terrific!

You can probably add your own fat to the cottage cheese (butter).....or change stores.
