I am thrilled to have found this recipe. I have fond memories of visiting my uncle’s bakery in Lincoln, England, where he made these. He used to cover the sides with cream and roll them in toasted nibbed almonds. I think he used butter cream rather than fresh but they were delicious as I am sure these are. They are impossible to find here in the UK (but I would appreciate being contradicted and pointed at a bakers that makes them). I am visiting Cochin later this year, can you tell me where to find these cakes while I am there?

Nice ,but my style of cochin bakery japaneese cake is different,my father was a baker in cochin bakery 1960...it is really a tasty cake ...due to higher education I improved this orginal receive more we use cashew instead of almonds,making and baking style different..I can make buyers stand in que for japaneese cake topped with jam or cherry

Hey Anitha. I apologize for the delay in reply. The size of the ring is 8 cm, the size of the tray doesn't matter, use a tray that fits your oven. Also, please tweak the recipe a bit. please add 50 grams almond flour and 40 grams raw cashew powder instead of 90 grams of just almond flour.
This cake reminds me of summer vacation and grandparents home. Will definitely try out this recipe.

Yes, Cochin bakery Japaneese cake is delicious. Wish, I could get the original recipe! It was one of the items for our wedding reception menu!
