If you're open minded, try cottage cheese gnocchi. Been putting fresh! (not salted or sour) cottage cheese, salt, flour and eggs in mine and they come out perfect every time. They're so much easier than potato gnocchi, too. The preparation process is fast and easy, you'll only need about 30 to 40 minutes to feed a family with. Perfect side to gravy dishes, and can be enjoyed with sauce on their own as well. They're also nutritiously more rounded than potato gnocchi, with more protein, which means you can serve it as main and skip adding meat. My favorite combo is Genovese pesto and these gnocchi, and I had them with ossobuco steak just the other day. They're slightly more tangy than their potato counterparts. If you like them cooked hard take them out soon as they float to the top, for al dente leave them in another 30 extra seconds, and for softer, jelly-like ones leave them to boil in the water another 2 minutes. By the way if you want to substitute ricotta for cottage cheese you can, but you'll have to add more flour as ricotta has more water in it. You'll also lose the tanginess in the flavor profile. Hope you enjoy this utterly delicious culinary travesty :p

Hey - you can buy potato flakes (search Knorr Potato Flakes for reference). That way you have the potato part without needing to cook them = easily save 30 mins. It's NOT mash mix, it is ONLY potatoes dehydrated, so you will still need to do your own seasoning and such. Happy cooking 😊

I approve your gnocchi. You can add ricotta cheese to the dough, no problem. During my period of study in Japan I used to use hard tofu instead of ricotta. Even for gnocchi. And it was pretty good. Brava.
In Italy gnocchi can be made with several different veggies like pumpkin too and sometime we add in parmesan or pecorino cheese, or ricotta. The idea to add protein inside is totally ok even with the italian idea of gnocchi so it can't even be considered illegal, whatever other italians could say (and even if i'm mostly weirded out from how people cook italian dishes) this is totally approved and not illegal ;)

Huh. In Poland we make something similar (we don't use tofu), we call them Kopytka, my mom always makes them if they have leftover potatoes. Very delicious with some sauce or even such some butter (the heat melt it) for added deliciousness 😋
Fun fact: There is a channel called "Pasta Grammar" that I'm a huge fan of. They have very interesting videos about Italian food history culture and recipes. They did a "medieval gnocchi" recipe. At that time, potatoes had still not been exported from the Americas. So these medieval gnocchi were actually out of cheese!
Funny. I like the idea of adding proteins. Dumplings and pasta get eaten by my child. Maybe it's worth a try. Now as he gets to eat some of the school meals he often dislikes my more healthy meals. @FitGreenMind My Mom made potato dumplings in this manner, but instead of flour she used Farina / Cream Of Wheat. It made the dumpling heartier. After rolling them out into a dough "snake" shed cut them on a diagonal then pan fry in butter and breadcrumbs (to make them crunchy). So good! I'm new to your channel and love a lot of these recipes! ❤

they're almost perfectly authentic minus the tofu. if you want them to cook evenly, make sure you roll them after cutting the dough xx

I’d get rid of tofu altogether and just use chickpea flour. Flax flour’s also because it has less flavor.
