I tell ya once you go wagyu biscuits you never go back! 😂 Pretty cool set up with the tin foil baffles to move the heat through, and a great explanation of how the heat will move, the closest path of least resistance. Awesome job Kevin! Hope you’re having a great weekend brother!
26 ga. Sheet metal you can get at home depot works great too. Then you don't have to wrap a grate. It just holds shape. The thinner the sheet metal the better though.
I’m curious. Do you think adding an aluminum pan filled with water(water baffle) on top of the metal baffle would reduce the variation from left to right; making both sides equal in temperature? Would love to see that experiment
I saw a similar video for the Oklahoma Joe. The only difference is they used both racks for the fire box and leaned the first up over the opening in the cook chamber and the second inline with it which directed the heat a little further down. I think he achieved a 5 degree split across the cook chamber.

I honestly feel the biggest reason you're having the temp variance at the front is from all that smoke escaping from the front. Maybe adding heat gasket tape on the inside/bottom of the front door would give you a more stable & long term fix. I would actually do 2 strips. One on the "Drum" and a 2nd on the door but offset so they don't hit evenly, but look more like one ABOVE or barely overlapping the other when the lid is closed. Also, Repeating that grate&foil would give you the faux tuning plate effect as well. My char-griller pro finally died and I was about to pull the trigger on the Old Country Wrangler, but saw your videos on the Kingsord and thought for the $$ I might get this instead. Thanks for the great content. Still on the fence. Btwn Okie Joe Longhorn, Old country Wrangler, and now this Kingsford model. KINGSFORD?! Who'd of thunk it! LOL Just my 2cents worth.
I know a lot of people really like the Old Country pits and the Kingsford Rancher (thicker steal). They've had to make some adjustments to both of those smokers to dial it in a little. I've added two strips, its definitely helped with smoke lose, but heat due to the Stockade thin steel still seems to be an issue. Its a cool smoker, but it definitely is a thin steel piece of equipment. Good Luck and happy smoking!

If I'm going to spend $300 or more I might as well get something sturdy. The Kingsford Rancher XL looks pretty good, and more accessible. I can only purchase the Old Country from Academy Sports and I would either have to drive to Terra Haute, IN or pay $159 in shipping to my place in Oswego, IL. LOL. But Home depot carries the Rancher XL and shipping to my door is FREE. THANKS AGAIN. Keep up the great content. I'm a new subscriber as of today!
I emailed the corporate supplier of the stockade earlier today to see if they would give us an answer with their plans. Radio silence still from them. A little frustrating, I’ll keep you posted if they respond.

I know on my other smokers water definitely reduces temp across the board. Will have to double check on this one, that’s a good experiment, thank you!
