It's not just the thickness of the pepperoni slice that makes it form the magical cup - it has to be the right thickness AND cut from a stick with a natural casing - by that I mean either an old-school gut casing or the modern collagen casing. If the casing is rigid, fibrous, paper-like - you're gonna get a very flat slice no matter how thick or thin it's cut. It has to do with how the meat fibers swirl around each other as they are forced into the casing. The gut or collagen casings swell out a bit (watch a video of this) as the meat is forced in, letting the meat fibers arrange themselves in a fashion that contributes to cupping. If the casing doesn't give or stretch at all as it's stuffed, you're gonna get a flat slice. I have eaten way too much pepperoni in my life so far, with no regrets whatsoever. The sight of the Prince Street pie gave me palpitations.
