The V4 of this tamper improves over the V3 version, in regards to the central shaft design, and it includes interchangeable springs with either 15lb, 25lb, or 30lb resistances. The design is such that, the pressure is applied directly to the coffee grounds, in a plumbed manner.
As with the previous V3 version, this tamper is known for tamping with level. The leveling plate which rests on the rim of the portafilter ensures that the tamp will be level every time. Additionally, with the calibrated springs, the same amount of pressure can be applied during each tamp, as long as the coffee bed is the same.

53.3mm: Designed to fit baskets of 54mm diameter, they're fully compatible with many of the Breville / Sage Barista Pro and Breville Barista Espresso Machine models.

Nice video! I have this tamper, love it! The spring you showed is actually the spring for the top guide and has nothing to do with tamp pressure. The spring for the espresso is buried inside the handle cylinder, that is the one you change to get different pressure on the coffee. Pro tip: take it fully apart and apply some 'food safe' grease to the cylindrical moving parts. I had issues with the tamper action being a bit rough; especially if you're not exactly perpendicular on your press. Adding the grease really made it work nice and smooth!
Hey Tony, thanks for those tips! I did not honestly know you can take the handle apart. I will have to inspect that later. Any chance the cylinder depth can be adjusted? It doesn't go quite deep enough for my La Spazz baskets. Oh, and what kind of food grease do you recommend?
@@TomsCoffeeCorner Hey Tom, I really don't think depth can be adjusted. The unfortunate solution is to go with higher doses (as you know). Regarding the grease, honestly I just used some light bearing grease from my garage, but many people may not want to risk that so that's why I said 'food safe'. It only takes a very small amount, so I didn't think there was much risk of that leaking into the coffee during tamp. I actually wrote a letter to the company suggesting that better machining of mating surfaces on the next version would eliminate the need for any grease, they said they would consider that. But of course that increases manufacturing cost, so who knows if they'd do that.
Okay i have used this Tamp quite extensively now. What you need to understand about this tamp is you need to dose to suit the tamp. Some people dial in their espresso shot by varying the amount of coffee they use. With this tamp you can't really do this. (unless you want to buy lots of different baskets) With this tamp you have to experiment and find the exact amount of coffee that the tamp will compress perfectly for you and your shot. For me, in my IMS 14-18gr basket i have to dose 17.7gr. I then get the perfect compression for the basket and flowrate. The beauty of this tamp is when you do get the exact weight for your basket it makes for incredibly consistent and quick puck prep. I have the Niche Zero grinder so i put in 17.8grams of beans i get 17.7 out and then this tamp does the rest. Essentially this tamp requires a certain amount of dialing in all of it's own. But wow, when it's done life is so much easier, so much more consistent. It really is worth the hassle.

However, a change in grind size impacts the volume of coffee in the portafilter even at the same weight which impacts the tamp.
@@LivingTheLifeRetired That's true but it doesn't change anything I said. You still need to use the correct amount for this tamp to work properly.
@@holly4221 A different spring won't fix that problem. The only way to slow down your extraction is to have finer ground coffee.

I just bought this tamper and I'm not certain that the various springs will make a difference. If I'm tamping to the same depth each time and hit the same depth limit each time whether there is a 30lb spring inside or a 15lb spring I think that the coffee ends up compressed at the same density. Or put another way, if the tamp travels to full depth using the 15lb spring then it would travel the exact same depth (and pressure?) using the 30lb spring. It's super level and super thin tolerance as you noted but I can't logically understand how the inner spring adjustment matters.
I took shaft apart which is the pressure apparatus (the outer spring gets overwhelmed during tamp and just helps level at the beginning). I drew a line at the collar travel up the brass shaft until the inner core pushed to the top where the inner handle top would stop it. I did this with each the 15lb and the 30lb springs and they each end at the same exact line. So both springs tamp to the same exact depth which means they do not compress the puck to any different density, which is what pressure tamping is meant to do. A 30lb tamp should make a thinner denser puck than a 15lb tamp. I don't get it. Is there something simple I'm missing?

This tamper review, and most especially the depth, made me decide to buy the 58.5 mm tamper. I love everything about it.
I ordered one, and I don't think there's much difference in the tamping pressure, provided it's more than 5lbs or so. Here's what I don't understand, how does having a 15 (or 20 or 30) lb spring in the tamper help? The spring doesn't push down into the coffee, it presses up against you. So, if you want to tamp the coffee at 15lbs of pressure, and you have the 15 lb spring in this tamper, then you have to apply 30 lbs of pressure to apply 15 lbs of pressure to the coffee. Right? So I don't get the spring weight.
Hello John, you bring up a good point. The force of the tamper actually is met with an opposite upwards force from the outside rim of the portafilter. For that reason, I think that you are right that the springs do not actually put force directly to the coffee puck, but rather to the rim of the basket. Maybe a mechanical engineer can answer the question even better.
The 15lbs spring provides feedback to the user. When the spring is fully compressed it means the user applied 15lbs of force on the coffee puck.
@@EmilCataranciuc From a physics standpoint I have to agree with the OP you're replying to. If the spring compresses under 15 lbs of force that doesn't mean the coffee was compressed with 15 lbs of force. I can still exert more or less force than 15 lbs depending on how full the filter is. If the basket is filled to the brim with coffee and I compress the spring but fail to press it all the way down 10mm I have applied more force to the coffee than if the basket is filled up enough to just barely touch the puck when fully compressed. There are more variables than spring resistance to this equation I think

Have you tried this tamper with the IMS (DL2TH26E) 51mm basket for the Dedica?
I just got the Normcore naked portafilter and the IMS basket, and a 51mm tamper from Amazon, but the tamper does not fit in the IMS basket. It gets stuck right on the top of the basket.
So now, i am searching for a suitable tamper for this basket.

It depends on your basket. I think the 51.5mm would fit though, it might be a tight fit.
You mentioned about baskets being slighly bigger than listed. So if they say my Gevi basket is 51mm do I get the temper size 51.5mm??
Well, maybe. I have not tried a Gevi yet, so I do not know how much larger their baskets are...
Can this Normcore tamper work if you want a little MORE grinds in your basket so there's a bit less space at the top? I have a 51MM basket and I need all the coffee I can get in it.

I don't understand how this tamper works since it has that skirt that keeps it from going very deep inside your basket. It seems to me that it doesn't matter how hard you press on the handle since the skirt keeps it from going anywhere. When you press the knob does it cause the tamping end to extend down?
The skirt helps level your tamp, but yes it does bottom out after about 10mm, if I remember right.

I got one of these at 58.5mm for my breville dual boiler to replace the default tamper. First thing I noticed, it’s heavy. About double the weight of the default tamper. Feels very sturdy in the hands. The calibrated spring is surprisingly strong with coffee in the basket, so that just shows how I was going too light before. Have made 2 cups so far, they were the best cups I’ve ever had! My extraction usually varies a lot, anywhere from 23-29 secs for 1:2 ratio. This has so far consistently given me 27-28 secs. The way the coffee comes out looks more....stable? Before the stream would often do the ‘wiggle’ quite early on, now it’s a steady stream of golden brown espresso for quite a while before it has that unstable wiggle. Overall very impressed with it

Personally i dont see the dosing thing as an issue, youve already spent that much on a machine, whats a couple of filter baskets in the grand scheme? I assume a lot of people interested in the normcore already have more than one basket
someone tried the Oster Barista is 58 mm but I'm not sure if with 58.5 mm it will fit or I will have problems, I do not live in the US so returning it is a problem

I decided to purchase the standard Bambino online, and at the same time would like to order an upgraded tamper to replace the apparent light plastic rubbish they supply with the machine. Searching online for the correct size tamper is proving to be a minefield.
Could you possibly recommend a decent tamper for the Bambino please? It really does not need to be Italian or walnut wooden handled or anything. Just a decent weight and ergonomic.

@@antz123-m3f hi there! Well, you could get this one. It’s 53.3 mm, so it’s helpful in getting all the coffee powder off the rim of the basket. Otherwise, just choose from any of the offerings for Breville. I honestly like this one quite a bit.

Well, it might not fit great in the La Specialista baskets, because they're a bit tapered...I'd say stick with the OEM tamper.

Hi tom, i bought the neouza 51mm but the spring is not working at all. The seller said i got too much coffee in my portafilter but when i tried lowering the dose and the spring still stuck. I wasn’t able to tamp at all. Weren’t able to refund

@@TomsCoffeeCorner It has an end stop, like the Normcore, but much shorter.
The Normcore endstop is sufficiently deep, I never hit it (I change baskets rather than underfill a basket - reason and details given upon request).
Anyways, the way I use the Normcore is to push down lightly until I meet resistance. That will be when the coffee will not compress much more however hard I push. I then add pressure until the heavier adjustable spring starts to compress a little bit (the handle moves down when you press considerably harder), and then hold for a while. Consistent flat tamp every time.
Actually, after using the Normal Dose for a while it has several issues which make it inferior to the Normcore IMHO.
End result is that I cannot achieve tamps as consistent as I do with the Normcore with the Normal Dose because of its bad design.
I do not understand how a competent honest reviewer cannot give the Normal Dose a low rating.

Thanks! That's a good question. Some baskets are slightly tapered, so it might be safer to go with the 51mm version.

Hey James, as I understand the mechanics of the springs, the 25 lb spring will compress and give way to the opposite force starting at 25 pounds. So, you have 2 opposing forces. The coffee puck on one side, and the spring on the other. The max amount of pressure the 25lb spring can provide before caving should be 25 pounds. At least that is my guess.
@@TomsCoffeeCorner that was my assumption but when I press the tamper on my bathroom scales, the springs begin to compress at much lower forces. The 30lb spring gives at 13lbs.
@@TheTurbohippo Wow only 13lbs!? I don't think the spring mechanism tampers are really that accurate but that sounds like a good amount off from the target! As long as coffee is pretty much fully compressed and level I don't think it matters too much, being relatively consistent is also helpful. The thing about springs is that they're kinda progressive, so wouldn't the depth of coffee in the basket change the amount of force applied?

I got the stainless steel original version. A couple of reasons. Besides bring $50 less expensive the painted machines aren't stainless. I'm very happy with my machine, now I have to upgrade my grinder. Been getting by will the Baratza Encore. Great for filter brewing but not flexible enough for espresso. I see a Eureka Mignon Facile in my future.

I have a Eureka Mignon Specialita. I love that grinder. I have had a Sette 270W, Ceado, Encore, among others. The Specialita takes the cake for me. Maybe I'll do a review on it. Eureka makes great compact, quiet, non static grinders, with low retention.

Do you feel the resistance of the coffee at all when you're tamping or is it just the spring bottoming out you're kinda feeling? The V3 was like that, I kind of prefer feeling how much the coffee is being compressed. I think the main difference between V3 and V4 is the interchangeable spring that changes the tamping pressure.
Hey Ben, thanks so much for your comment. Most of the time, I don’t feel the resistance of the coffee. But I think that has to deal with a very deep depth of my baskets. I may take the base off of this one and put it on my manual tamper to try next.
@@TomsCoffeeCorner oh here's a maybe little known fact (at least with V3) the Decent brand self leveling tampers are 58.35 not 58.5 so not quite as tight of a fit. However I've found the base of the 58.5mm Normcore and Decent ones are interchangable so you can swap them. That's currently how I'm using them. I possibly have the only 58.5mm Decent Tamper. 😁

(51 mm that holds 14g approx) Also, I'm buying the bottomless portafilter Normcore makes (one that you made a video about) and I think I'll get the 51 mm spring loaded tamper to go with it. Trust these are good choices? I haven't measured with a caliber but eyeballing it and researching on the website it seems like a fit configuration.

If you find you're needing to dose your coffee amount higher than you like, you could always get a smaller basket. Of course that's not ideal since it's an extra expense.
I also have a Decent brand V3 tamper and I compared vs the Normcore V3 (58mm) and found the Normcore actually can extend a bit deeper! I never really had an issue with the max depth of either though (with 58mm baskets, usually 18g size, and I've sometimes used 16 or 17g doses).
Hey Ben, it’s an aftermarket 20 gram basket I’m using. I think it’s from VST.
I might look for a different basket anyway though, because the coffee puck really sticks to the sides of this aftermarket basket. I prefer the baskets that allow the coffee pucks to just slide right out.
@@TomsCoffeeCorner checkout the Normcore or other brand stainless steel discs that go into of the coffee and work as an additional filter or shower screen between the coffee and shower screen it really does help with getting clean solid dry pucks out and keeps shower screen and group a lot cleaner. Too clean maybe I noticed my e61 lever was getting a little stiff because if wasn't exposed to as much coffee oils or particles it usually gets with use.
Sorry forgot you're not using a 58mm machine, I'm not sure if they have other sizes but maybe eventually a company will make them. Update: looks like they have a few smaller sizes too! 53.3 or 51mm!

@@TomsCoffeeCorner I don't think I've noticed a difference, having good shots now but I wasn't really having bad results before I installed it either! But it does make things a lot cleaner and doesn't seem to make things worse so I'd say it's worth a try.

I think Maestro is 51mm, should I get 51.5mm size tamper then?
Hi Ivan, yes the La Specialista models are all 51mm, but they have a ridge, so the 51.5mm will get stuck. You would have to get a ridgeless basket like the IMS to use a slightly larger tamper. Hey Tom, I'm relatively new to the world of making great espresso. I've been learning a lot by following your tips and advice, starting from choosing my espresso machine to today when I purchased the Normcore tamper that seems to work well with my Breville Bambino. I agree with @dseback when he commented on the high quality and detailed videos you're making. One of the things I like most about your videos is when you compare them with their pros and cons; I feel honesty in your work.

What dose do you generally use for your vivaldi? I have the same machine and typically like 14.5g..15g at most. I use the IMS basket. Was thinking of getting this but your review is making me question it.
I normally use around 16 g. The baskets are just too deep, so I use the combination of this tamper with a standard one. This tamper is great, because it scrapes all the grinds off the side of the basket, and tamps level.
@Tom's Coffee Corner Thanks for the reply; seems there is no chance it will work for me then given I use much smaller doses. The work around for not having enough travel is doable, just cumbersome to have to always use 2 tampers on the counter. Hopefully someone will come out with a 53.3 that will work for the vivaldi...
@@jcran17 Yes, I mean it works alright if you use the original basket that only fits 15-16 grams, but it still could use 2-3 more mm travel. It really doesn't work with the deeper 21 gram basket.

Too bad you have no idea how this tamper operates. 1. The bigger spring has nothing to do with the tamping pressure. 2. Instead of regurgitating the manufacturer's claim about each spring's pressure you should have tested them. The weakest spring for an example has 32Lb pressure instead of the claimed 15Lb. You also neglected to mention the huge manufacturing tolerances which cause so much wiggle in the tamper that it's not fun to use . Overall it was a useless review.
