The one thing that bugged me the most during this show - especially the first two seasons - was how they portrayed adoption. Emma gave Henry up and Regina adopted Henry. But everyone in the show was like "Henry is Emma's son not Regina's". It frustrated me to no end. In the real world, Emma would be in the wrong.

Exactly. It’s also the complete lack of love that Henry has for Regina that gets me too. That kid had known her as his mother for 10 years before he received the storybook from his teacher, and then he suddenly turned on her with absolutely no remorse? I understand how conflicting everything probably was to him, but the absolute bitterness he had towards her was unreal. He believed she was the evil queen, yes, but the show could’ve shown how much trauma he was facing over finding out someone he loved and relied on was evil. In the show he just accepts it casually and immediately takes a liking to Emma over the person who took care of him for his entire life. Wtf?

And as soon as that's done, she immediately tries to leave. Even after she got in an accident, she still fully intends to leave as soon as she is released from the police station. But Regina in her stupidity and paranoia chose to threaten Emma even though Emma did not indicate in any way, shape or form that she intends to stay. And that is the only reason Emma stayed. Regina is very good at pretending to be diplomatic, it comes with royalty. This was shown when she disguised herself to spy on Snow White, when she convinced Belle to kiss Rumplestiltskin, and when she made Sydney fall in love with her for his genie magic.

Regina adopting Henry made no logical sense. He lives in a town where no one ages but him. He advances grades while his classmates are always in the same grade (ex. The Mad Hatter's young daughter Grace never aged during the curse). Did Regina think Henry wouldn't notice or that she could gaslight him into adulthood that the absurdity of the town wasn't real? What was here plan here? It doesn't make sense.

Regina had to have given some thought to how she was going to raise uncursed Henry in cursed Storybrook. He was going to notice at some point and ask questions. What was the plan? Shared his observations of his weird hometown where no one ages, including his mom? Word would have gotten out, outsiders would have come in and her self styled world would have come crashing down.

She probably figured she’d deal with it in time and just enjoy loving him.

She can leave because she wasn’t a victim of the first curse. She enacted the curse with specificity; in Season 2 (I don’t remember the exact episode), she explains to Cora and Hook that they are all able to leave Storybrooke without being affected by the curse because none of them were written into it as victims. She was extremely clever and precise in her actions :)
