As an audio engineer this was fun to watch. Im sad they didn’t include the binaural beat illusion tho! Basically two slightly different pure sine tones are played in separate ears (one tone left one tone right) and the illusion is a third tone that pulses, but the pulsating part is in your head. The sine waves are just a constant pitch, so it doesnt pulsate, but the slight differences in each ear create the illusion.

When the sound is going up, it is not the same notes being played over and over again, they just go up like three times and then re-start it again. You can tell by rewinding and fast forwarding. If this was true, when you rewind it you should still hear it go higher, but it doesn't... until they replay from the beginning, (which is were the trick is)
In Shepard tone, the pitch DOES go higher but in a way that you feel like there's no end to it. That's because higher frequencies start loud and get quieter over time and simultaneously, lower frequencies start quiet and gradually become louder (repeatedly).
Sheppards tone is what Hans Zimmer uses in the Batman films. I think the note is getting higher and lower at the same time which makes it sound like its increasingly getting higher

For the one with the pitch going up or down essentially it does both its just dependent on the person which you hear more prominently and therefore which one your brain fixates on as being "real"

The Shepard scale effect is due to its repetitiveness. Since it's the same sound we are hearing every second we anticipate the next sound even before it actually is heard! That creates the illusion.
