    I am so happy to see other people have a pork freezer, beef freezer, chicken freezer, and we also have one for rabbits and other frozen veggies, fruits, etc. I always used to think we were oddballs, lol.

      Can you tell me how to use an old fridge freezer? I out it in the garage but I found out that it did not keep the meat chickens I raised and they got ruined. I had to throw them away . I literally cried. I did not know that it would not good the temperature in the garage. I need to empty it out again before winter because it has other store bought meat in there etc food in there and it killed me to lose the ones I raised. It was a lot of work but I now can say I know how to do it and will again. My 9 year old helped me and we are hoping now for our first chicks to hatch from her pet bantam chick who decided to go broody. Kind of exciting and nerve-wracking cuz I think she's past the day of hatch and I saw life but never did this before. Looking in how to build a simple incubator or just wait. I don't know if she can keep them warm enough. And there's too many eggs so I will wait and maybe try the incubator next time since she can't keep too many eggs. I read only 3-4 but there's more. So I don't know which ones may have died? I don't know how to tell yet but I'm guessing if it's too much longer than they may have passed, but there was definitely something growing in there. I saw movement in one for sure and did the candling, I can see lots of development and veins and airsac etc but not sure yet if they will make it.

    Love the dividers in the chest freezer, I'm going to do that. I do recommend keeping enough jars on hand to can what is in the freezer should things get bad but that's just the prepper in me :)

    Gramma used to have a massive box freezer, I can’t wait to get one! I’ve never owned one myself. Great tip about the power, I have hurricane cooked through a small freezer when we lost power. I would be devastated to lose quarter cow

    I just bought half a beef and put it in my freezer barley got it all in i got it off craigslist a farmer took 2 cows down and one of the buyers backed out so that would have been 2 whole cows and that was two much for him so i got it a really good deal i thank the lord i can look in my freezer and know there's a lot of food

      My freezer is 37 inches long 20 inches wide 30 inches deep and it filled it to the top with nothing in it and a little my fridge freezer

    Would love to do this one day! We’re a military family so we move a lot and can never put down deep roots anywhere. We’re in Cali right now but moving to Kansas in a few months. We get Butcher Box delivered monthly which allows us to not have to buy much meat from the store. Thinking of finding a local farmer when we get to Kansas and seeing if we can do a cow share or something. We have a 7 cu ft freezer. Thank you for these videos!! You are so inspiring. :)

    This was amazing. I got my first quarter cow last year, and thought I was really doing something! I have a single 15cu ft chest freezer, but I'm only one person, so I think a quarter is enough.

    Love how you used plywood to create compartments! We have a separate freezer for each kind of meat (beef, pork, poultry, seafood/fish) plus one for veggies as well as one for storing homemade breads, stews, pre-cooked/prepped ingredients, freezer friendly left overs or make ahead casseroles, homemade microwave or oven bake "snacks" (hot pocket/hand pies/empanadas, pizza, burritos, etc.), and dairy. We keep bags of ice and space available to fit them in "just in case" of power outages and thermometers to monitor temps. The freezer for breads, dairy, cooked and prep items has been challenging to organize. We've tried baskets, boxes, etc. Your plywood compartments just might be the solution needed!

      @@jamjar5716 'Fraid so ... but after developing some mobility/degenerative issues ... freezing took over as our primary preservation means over time as lost more ability needed to spend long hours on feet, lifting, etc. needed for massive amounts of canning I used to do -- although still do some with a bit of help -- as well as dehydrating. And for bad days when not even up to cooking there are ready meals in freezer waiting for the guys because I cook extra of freezer friendly stuff on days I'm up for it. So over time we went from a single small chest freezer in the house to having several larger ones in a converted 2 car garage/out building.

    Loved your video. I need to get organized like you. I tried freezing my extra eggs and didn't care for them. I also didn't like giving up my freezer space so I searched youtube for Waterglass eggs. It's how grandma keep eggs year round.

    Love your videos...In watching this one I see you freeze eggs. I was wondering if you'd ever heard of or tried "waterglassing." My husband and I raised chickens for over 30 years. We had sporting/family camps on a remote lake in northern Maine. The grocery store was 32 miles away and running out of eggs wasn't a good idea. So in researching ways to keep them, not only for the times we were feeding a dozen or two people per meal but also for when our chickens went through a molt, I came upon an old time technique called waterglassing. It's incredibly easy, requires no space, no electricity, and keeps eggs fresh, safe and looking as well as tasting like newly laid eggs for A YEAR or MORE!. I purchase a gallon jug of sodium silicate- also known as cement sealer (!) about every 8-10 years at a cost of less than $20 a gallon. The formula I've used, though proportions vary slightly depending on the source, is one part sodium silicate to nine parts cold water, mixed well in a clean five gallon bucket with a lid. Into it are placed the wiped off but NOT washed eggs. This amount of solution will easily handle 15-20 dozen eggs. Keep the bucket in a cool-cold place that won'T freeze, like the basement or mudroom. Take eggs out as you need them, wash them off gently before using and you're good to go. I've spread the word whenever possible to chicken owners about the technique, and now that I'm an older widow, no longer raising chickens, much appreciate the fresh eggs people have stopped by to share with me as thanks for the information (and often the sodium silicate which I've given as a strange sort of gift many times :) Best regards, Kathy B

      Katherine.....any thoughts on how this might work in a warm climate? We live in Hawaii where there is rarely a cool/cold spot other than refrigeration! Low 60's ( rarely) is as low as we go!! Otherwise 80's is the norn. Would appreciate any input!! Thanks!

      @@tianakanelua6573 Gee, Tia, I've never given that any thought. But I wonder if something like a small "root cellar", if you also have some land you can dig in, might work. I don't know the ground temperature in Hawaii, and I'm guessing it varies according to altitude possibly, but my basement here is a steady 55 degrees. Is that a temp you could achieve by "planting" your bucket in the ground? We store root veggies that way in the north,
      where winter temps often go to -20 degrees or lower. I've tried to locate online soil temps at different depths in Hawaii but not knowing where you live, I was unsuccessful. You might search this out knowing your specifics, or contact your local Cooperative Extension Service for help with this issue. I use mine in Maine all the time for issues like food preservation to making window quilts. It's always been a great resource, if not for answers, then where you might go to find them.     I bet all the boys wish they could have snagged you. One lucky husband. You do so much with so little. We’re all going to have to learn what you know real damn fast. I’m whiteknuckling it as Harvest Right has a 10 week back up (white comes a little sooner so I got that one), the garden is nothing but a bunch of seedlings 🌱, and I know nothing about solar to keep the freezers going. At least I learned canning from you. Only have 1000 hard won canning lids (ordering as little as 6 boxes up to 12 then checking the shelves while I’m there) driving to every Walmart within an hour the past few weeks) so ordered the Harvest something longer lasting ones.
    I wish I grew up in your family where you gradually just know everything from watching it be done. I hope there is time to teach my 13 year old daughter so she can teach her children. Since you can’t make more of you maybe you can train some of your best students to then go train others. Like a certificate program showing they were trained by THE Melissa K Norris. For hypnosis it was Deloris Cannon but then she died so I was trained by Alba Weinman. For cutting edge psychology it’s Sue Johnson, I have been trained by her personally and has marriage counseling from her right hand man, George Fuller.
    The idea is you take the best of the best and you learn from them every little detail with an engineers mind, which I have, then you do and teach when you’ve gotten excellent.

      George told me to get out (sociopath) which you aren’t allowed to say. (Emotionally focused couples therapy is 72% successful where normal is 32%.) He’s out of my house now. I doubt people will re-elect him as a judge when they find out who he actually is and the things he has done. I hope I live long enough to get it out there now that he knows it’s coming.

    Good idea with the different compartments. I could really uses the organization. I know which freezer something is in but, rooting around to find what I'm looking for!...yeah, my life.....I may just have to use this brilliant idea. And, yes, I said brilliant!

    We also have multiple freezers, although all of ours are uprights. I have a beef freezer (fits 1/2 beef), one for pork, one for chicken and "ready-made" items (I do big-batch cooking and make-ahead freezer meals), one that I share with my mom so I only have 2 shelves plus the door but we keep bread/tortillas, baked goods and butter in here, and one in a fridge/freezer for fruit/veggies/juice. I put post-it notes on the outside of the door so I know where the sirloin steak is located compared to the stew meat. It also helps that my family has been trained to look at the post-it notes first before opening the door and standing in front of the freezer searching for items! :-)

    We had one chest freezer for the longest time then added an upright freezer which we don't care for, rather have a chest one. This year we added a third freezer, a chest one since we raise rabbit, chicken and goat for meat.

    i thought i was crazy having 4 freezers - 1 huge chest in kitchen and 3 9 cub ft ones all over. and in need of more, oh and 3 fridges picking up another tomorrow for the hay shed and to be used for eggs.... now i know it is NOT just me. phew...

    Onion skins are a great source of minerals! I add them to soups and broths too. All these things we were taught to throw out that are edible. Sad. Thank you for teaching people what they should be eating instead of tossing out.

    When you looked at your eggs made me think. Have you ever heard of "water glassing" them? I just recently saw an article of woman with another youtube do that. We have recently done freeze drying and i did two different batches of 56 eggs each, one scrambled then stored in 1/2gallon canning jar and the other where after freeze dried seperated whites and yolks for maybe cooking recipes later..

    If it was me, i'd drill 1 to 1.5 inch holes in the wood of the freezer to make air circulation easier. Might be a good idea especially in those power outage moments.

    I use grocery bags and tag the handle with masking tape what is in that bag and when I put it in there makes things much easier to put in and out

    We definitely need to try the plywood trick for our freezers! Such a pain to have to search through everything. As far as saving the onion skins and trimmings goes, we did that but noticed something strange. Every time we add onion skins to our bone broth, it never gels. If we don't add the skins, it always gels. Not sure if it breaks down the collagen or what, but even my husband has commented on how strange it is.

    we have been raising pigs for a good ten years. I do make my own lard (leaf) but, have never taken the trotters. Do you ask for marrow pig bones? Do you make soup with them? Thank you, I hate wasting any parts just because I am unfamiliar with the usage. Thanks!

    I use so much of my freezer space for stock. I didn’t see any frozen broth/stock in your storage. It takes up so much room, even though I use it a lot in cooking. I’m thinking you must can your broth. I need to start doing this to free up space for meat. Thanks for doing this program.

    My roommate left our deep freezer unplugged. We lost the pig we butchered and made sausages with, a quarter cow, and a whole bunch of other meat. Can’t cry over spilt milk though. But dang, it really sucked.

    If you trim off the fat you can freeze dry it and store it in the house without the freezer. You just need to make sure you get the fat off.

      @@MFV77 Fat doesn't freeze dry. Trim off the fat and throw the meat in the freeze dryer and then put it in mylar bags with an o2 absorber.

    The problem with having freezers is that the money that you save gets eaten up by the cost of electricity. I have also found that buying local cuts of meat from the farm is more expensive than buying from my local supermarket. Supermarkets buy in bulk which lowers their costs per unit while a farm does not have this advantage. The only way to get meats cheaper from the local farm is to buy whole or half cows but then you must pay for the electricity to store them for as long as a year and a half. That's a lot of electricity.

      That what I was thinking. It is important to use a more efficient freezer if your electricity rates are high like in Europe. A solar PV system could lower it.
      Would like to find a freezer kit with a ground source and air source heat pump that would intelligently switch depending on the temperature to get maximum efficiency.

      Depending on the size and model, many freezers only cost ~$20-30 a year to run. The largest (24 cu ft) I've seen costs ~$60.

    Do you talk anywhere about how you wrap each portion of meat to prevent freezer burn?
    When you use the butcher paper is there plastic wrap under the paper?

    Have you considered insulating the pump house so you can store other things in there in the winter, like root veggies and keep the fridges cool in the summer? Less electricity used.

      Depends upon the length of time likely to be frozen and preventing/decreasing likelihood of freezer burn when anticipating longer storage times whereas not necessary for those items likely to be eaten sooner in shorter time frame.

    I’ve always been told not to have a freezer out ‘side’ where freezing temperatures could happen. How harsh are your winters? Of course it could be that my thinking is outdated with the newer freezers

      It's in a building it's not outside. But we get temps in the winter in the low teens sometimes but more normal for overnight lows to be in the 20's.

    I organize my freezer too although it's probably a bit too OCD 😬😄 Anyhow, if you want to see it, here's the link to my video I made a few years back.     Eggs stay fresh when kept at room temp up to 6 months. After that they start to ferment

      Thats if you don't wash off the membrane on the outside of the egg. Which most Americans do wash it off.

    How do you use lard in cooking? Like you would any other fat like coconut oil or olive oil? In place of shortening?

      Yes, in place of shortening. I use it in pie crusts, tortillas and for sautéing

      not overpacking a freezer, lots of air is needed. cleaning off the frost often and maintenance on the unit. check the fans/refrigeration system and drains. many need to be defrosted and start over. Other than that, packing with the least amount of air is best, thicker plastic, we used to put fish frozen in one liter milk cartons so no air touches it.. freezing things whole, so less surface area is touching the cold air..

      Self-defrosting freezers have a higher rate of freezer burn. If your freezer isn't a manual defrost this may be part of your problem.

      @@thequirkyhen2370 and a note to add to this; self defrosting freezers do very poorly in aces like the garage and shed. The defrosting cycles get messed up in cold areas.

    I have tried canning various cuts of meat but I've found that my family doesn't care for the texture so freezing our our meat is our only option.

      definitely not forever as the nutrients keep changing chemically and fading away. It's good to consume dried food within months after the drying process is complete
