    I add 1/2 cup of brown or green cooked lentils to my ground hamburger and turkey. I make the lentils up ahead of time and keep them in small bags on the refrigerator freezer door.

      We have found that if we buy grass fed beef it is not only more nourishing but a pound goes further because more lean

      How do you cook the lentils to be stored to be addition to meals...I have only ate them once a friend had made them. They were really good.

    I use cooked drained lentils and fry them in with the ground beef fat I do this for many recipes that use ground beef.

    My husband's dad is from Italy and he makes that first dish with potatoes and Swiss chard. It's delicious!

    Frozen semi firm tofu is a great way to extend meat, so are lentils. Semi firm tofu has an amazing texture once it has been frozen.

    I appreciate your content, thank you. I have been diving into zero food waste and came across using water that had cooked potatoes as an ingredient. Now I save that starchy water in qt. Jars. With the price of canned tomatoes nearly doubling, I have found that cooking 1qt. Of potato water with 1 small can of tomato paste yields a delicious tomato sauce for a fraction of the price of commercial tomato sauce. I am interested in trying your recipe with it.

    We add a can of refried beans to raw beef or turkey and bulks it up, adds protein and stretches it. Make sure to add worshire sauce to ground turkey for more of a beef flavor

    When I was growing up my dad, who was Italian American, would make peas and potatoes. Pretty much what you did, but a drained can of LeSeurre peas. It’s delicious and good when you don’t have any fresh greens. Love your channel, and feel better soon! ❤

    I just recently found you and I’m watching at least 2 videos a day!!! I just love the concept of them!!! I’m always looking for inspiration for supper and I’ve found so much here!!!     Just for info, people who have an allium sensitivity (garlic, onion, leeks, spring onion, chives) need to avoid the protein in it, which is water-soluble but not oil soluble. So to avoid a reaction, you need to fry the garlic as a whole clove to get the flavour but remove it before adding any fluid. Alternatively, you can buy commercial garlic oil.

    I have made your first recipe twice now since watching the video. Both were delicious!!!!! The first time I added a bit of cut up pork roast once the potatoes were almost done and then fresh spinach wow!!! so good. The second time I peeled the potatoes because they were old and once they boiled for a bit with seasonings added a couple of end slices of frozen lemon. Returned to a boil and added a small chicken breast sliced thin that I bought marked down. Once it boiled again put in frozen chopped spinach, a full package. I added another half teaspoon of salt because of all the frozen spinach. I served it to my family in large pasta bowls with a drizzle of olive oil on top. It tasted like we were at a fancy Italian restaurant. The meal was less than 5 dollars for 5 large servings. I love the suggestion of Swiss chard that another viewer added, two leaves would feed my whole family. Thank you so much for your amazing videos!!!!!!! I can't wait to try the second recipe.

      I made the picadillo last night for supper. I used ground pork, less than a pound and two cans of rotell and lots of the veggies you used. I found it a bit spicy for my taste but my family loved it. I added a fresh avocado, just slightly mashed to mine and it was great. I have many cans of rotell that I bought 3/$1.00 so I was happy to find a recipe to use it. I liked the first recipe better but I think it was different from the tomato based meals I eat so often. Thanks so much for the work you do!!!! you are helping me save a lot of money on food costs and eat healthier @@ArdentMichelle

      @@gaylesmith2328 Hi Gayle 😁 yeah...I think I mentioned in my video that the rotel was a little too hot for my tastes, but when I ate it a long with tortillas and refried beans it was perfect. I'll probable stick to milk green chiles from here on out. I made the vegan one again yesterday (actually eating it again at this very moment 😂) along with rice and beans. I used different green olives though and they weren't as good as the ones in the little packet from Trader Joes. It really is my new favorite meal though. Glad your family liked it and you're enjoying my other recipes. Thanks for letting me know!

    If you replaced the minced meat with regular meat chunks of cubes of even chicken and the refried beans/tortillas with bread you practically have made tajine ( a Moroccan stew dish ). Especially whit the added olives 🥰

      Wondering if you have the same one I have. I'm at week 2 and still coughing, but I feel like I'm on the mend. It was a bad one! Were you feeling exceptionally weak also? I don't think I ever remember being sick this long. My son had covid about 6 months ago but he didn't have lung involvement at all.

      ​@@ArdentMichelleme too, was sick for a month w non stop runny nose. Think had flu, then covid? Wish I wldve gone to dr for maybe sinus infectn etc. But found that drinking dark red wine really helped calm and dry the cough down. Only had a bottle, wish wldve had a glass a day at night! Same thing, completely whooped my butt for even longer than a month. Arg! 😢. 😊

      I forgot a way to extend ground beef or Turkey is tofu. My friend’s mom made what she called applesauce burgers. She added tofu and seasonings and a bit of applesauce, she said it made the burgers juicier. They were delicious.

    If you want to keep your cookbooks pristine, I try to photocopy the recipe and use that in the kitchen. Or a photo on my telephone if it the directions are not complex. Thank you for the video!

    So sorry to hear you’ve been so sick. I hope you’re starting to feel better. Potatoes are life! Potatoes are very good for you. The only thing unhealthy thing about this is all the crap people put on them lol All the yummy butter, sour cream and bacon 😅 But potatoes themselves are super nutritious! I made a very simple, yet filling veggie pot pie for dinner and added extra potato to bulk it up. So good, so filling!

    I’m all for stretching meat. Just please if you’re feeding somebody new make sure they know it’s not just ground beef- I have food allergies, and most of the things that you mentioned to stretch ground beef with would make me sick.

    Great video as always! I just really wish people would get over the "low-carb" fad and realize that our bodies NEED carbs! Our brains literally run on carbs, using up to 25% of our energy stores. Just make sure your carbs are high fiber whole foods, not refined processed crap. 😉

      @@ArdentMichelle I'm T2 diabetic and I eat a high-fiber, low fat plant-based diet. No meds and A1C firmly under control. It shocked the heck out of me to learn that carbs and sugars are not the root cause of diabetes, but dietary fats, especially saturated fat and cholesterol, cause insulin resistance which leads to diabetes. 🙂

    I appreciate you sharing your ideas but when i look at these meals... where is the flavouring?
    take your minced meat, add plenty of salt and black pepper before your put it in your skillet. mix the raw meat with the seasoning (salt/pepper), throw in a copped onion with the raw meat and add a good amount of sambal (spicy Indonesian hot pepper paste). mix this in with the raw minced meat. then add a dash of sweet soy sauce (ketjap manis). again mix it and let it sit for 30 minutes. use vegetables of choice (carrot/peas/cabbage/beansprouts/paprika) or use a prepacked veggie mix. throw the meat in a wok or skillet and make sure its browned, add your veggies and cook 10min with the meat. then add your cooked rice to meat and veggies and mix well. Done. Its very cheap as it serves a lot of meals. i didn't add quantities but you should quantify to preference.

      I'm surprised you think these wouldn't be flavorful. 🤔 The picadillo is a popular dish that I made according to most recipes. Flavoring comes from onions, garlic, salt, pepper, chicken bouillon, cumin, and tomato sauce as well as the beef. It's layered.
      As for the Italian potatoes and greens, I said nobody would believe how flavorful it is unless they tried it. 😂 It's just garlic salt and pepper. Italians been eating that dish for a long time.
      That being said, thanks for sharing your meal. Sounds yummy 😋👩‍🍳

      @@ArdentMichelle It might be because i see low quantities of seasoning compared to what i would use. And the soy sauce with sambal.. it packs quite a punch. Because it is mixed in with a rather large quantity of rice. it need to carry the flavour. on top of that the veggied also give flavour.. my main concern was the way of flavouring the meat though :) marinading it would make so much difference. Give it time to absorb the flavour before cooking. otherwise the flavour is on the surface as with cooking you sear it and close it off, making it less absorbing.

      @@mrnobody043 I like to use Huy Fong chili garlic sauce and soy sauce on lots of my meals-although it wouldn't be authentic to picadillo. I haven't tried the sambal oelek. Are they selling that in the stores again?

      @@ArdentMichelle ooh, if you want to use sambal.. i would advise Sambal Brandal. Oelek is basically raw, while the Brandal is a baked version and slightly caramelised. It caries more flavour and is somewhat sweeter(edit: and spicier). You might want to look for an Asian store as i don't know if your average grocery store has these. i'm located in the Netherlands, Indonesian culture is very prominent here when it concerns food and it reflects in grocery stores. We have a history as spice traders here..

    Speaking of spinach, I had a chicken leg quarter and not much else, so I boiled the chicken, strained out the broth, picked the chicken back into the broth, and added canned diced tomatoes and spinach leaves. I spiced mine with salt, garlic and nutmeg, and poured in a little cream at the end.
    It was AMAZING.

    Two remedies for your chest. One Vicks or chest rub not only chest but also soles feet and then put socks on. Other is "NEEM". Expensive but it opens up lungs. Good video.

    Great ideas as always. I made a version of your second recipe yesterday using ground pork, onions, celery, mushrooms, broccoli and cauliflower in a brown gravy. Served it over mashed potatoes. I usually use very little meat and load up on the veggies. I find that there's still meat in every bite but it's more cost effective and healthier.
    It was so good that I ate the leftovers for breakfast today.😅 Definitely going to try your recipes. 😍👍

    If you like sweet and savory try adding some raisins with the olives. One of my dear friends Damaris was raised in Cuba and she swears it’s the best way. She also uses yuca or green plantains instead of potatoes.

    When we first got together, partner randomly made me a meal of tater tots, ground beef and cheese. I dunno what they spiced it with, but it was so good. We call it crack ;) They just recently made me some crack with bbq sauce, sour cream and salsa. I have a bunch of russets, I'll try picadillo.

    Hi Michelle, I made the potato soup exactly like you did, only with home grown kale. It was deLISHous. I'm going to add that to my recipes! Thanks for potato ideas!

    People do underestimate how nutritious potatoes are. It's only bad for you if you eat it deep fried, etc. or if you eat too much of it without other things (veggies, proteins) to balance it out - otherwise it can spike your blood sugar pretty high, especially mashed potatoes. As part of a more balanced meal, it's very good.

    Can you do a more realistic 7 days meal prep for a family of 4 adults and 2 kids ( 8 year old and 2 year old ) I want this to have 7 breakfast ideas , lunch and dinner . And thanks ❤

      Hi Maria 😁 I've made some of these videos early on where I include breakfast and lunches but due to the time involved to produce them, I don't do them anymore. Also, most people seem to have breakfasts and lunches covered. Realistic is a relative term. What would be realistic to one person is not at all realistic to someone that is struggling to afford food. It seems that the very extreme budgets are what do best on my channel, but I recommend that someone add to these if they have more money.

    These dishes look so delicious. My family is Italian-American, so I am surprised that I have never heard of that potato dish! I will try it. Glad you are feeling somewhat better.     I made the first dish tonight and it's as good as you said. For the greens, I used frozen collard greens. I salted it well as you suggested and it's wonderful!

      They do have some high end stores, but they also have regular stores like bath and body works, Macy's, etc. It's similar to our Irvine malls. I like to go there because parking is awesome and usually no crowds.

    The potato recipe looks delicious and just seems to scream for cannellini beans to me. I will never understand why people don’t turn to beans, lentils or tofu for a protein source when money is tight because it’s way cheaper than any cheap meat you can find.
    Also, there is more protein in 100 cal of broccoli than 100 cal of beef- another thing cheaper than animal source protein.

      Those of us who get excruciating migraines or IBS from legumes can tell you why we don't use them as a protein source! Histamine intolerance is another reason to avoid legumes.

      ​@@ArdentMichellethis is food box friendly. I get 1lb cans of ground pork, canned mixed veggies, canned potatoes. Theres no fresh veggies or protein in food boxes.

      ​​@@ArdentMichelleI saw a recipe for humus that sounded good. They used half garbanzo and lentils, then mixed with feta and cream cheese + garlic, lemon juice usuals. Topped with roasted olives, onions in olive oil before serving. It'd be a great budget party appetizer.

    Looks great Michelle. I've had a similar ground beef, potato and tinned tomatoes soup camping before, it was good I'll remake it soon. I can get potatoes with the dirt still on them cheap at supermarkets here.

    Yep, potatoes sure are healthy!! The reason many people don't realize this, is because they are thinking of potatoes chips and French fries...and junk food. So you have to cook potatoes in a healthy way, like you did in this video. You're making me hungry!! lol
