Malaysian Style Kurma with Tofu & Vegetables | Mild & Not Spicy

  • Need to whip up something easy for a weeknight meal? Look no further! This Malaysian style kurma curry is simple, fast and tastes amazing. It's creamy and mild so it's perfect if you're not a big fan of spicy food. If you've never had kurma before, this is your sign to try it! It's usually made with chicken, but in this vegan version we're using tofu instead. Scroll down for ingredients 👇

    Tofu & Vegetable Kurma Curry
    Serves 4
    Blend or pound:
    4 cloves garlic
    2 red onions
    1 inch ginger
    2 curry leaves
    2 star anise
    1 cinnamon stick
    4 cardamom pods
    2 cloves
    50g kurma powder (I used Baba's. Here's a recipe I found for homemade kurma powder if you can't find any where you live - www.kuali.com/... )
    4 blocks of frozen and thawed tofu (80g each)
    2 potatoes, cubed
    1 carrot, chopped into chunks
    1 yellow onion, quartered
    2 tomatoes, quartered
    2 red chilies
    3 green cili padi (bird's eye chilies), optional
    1 asam keping (tamarind slice)
    Salt to taste
    1 tbsp mushroom seasoning or 1 vegetable stock cube
    500ml water
    200ml coconut cream

    made this last night - it was SO good. I used the adabi brand kurma powder, and replaced the carrot with red bell pepper and regular tomatoes with halved cherry tomatoes (added those at the end of cooking), also a handful of spinach for some greens.

      I'm so pleased to hear this!! Bell peppers, cherry tomatoes and spinach in kurma sounds beautiful. I have to try that combo one day 😍

    When you were halfway through I thought, "Hmmm, is that skillet too small? . . . " You did manage to stir the ingredients skillfully, though, and ended up with a bountiful looking pot of delicious stew! Thanks for posting : )

    Wow, I’m going to try that! For the Baba’s mix, should I use roughly equal amount for all the spices?

      For this recipe I used about 50g of Baba's kurma mix powder ☺️
