Just out of curiosity as I am from the States and our auctions a bit different but are the prices by weight or by the head? Also why don't you sort by color or breed?
They are sorted into groups that are the most similar and that by looking at them you can obviously put together. You could put two angus, or a limousin, a charolais and a blonde together if they are similar in conformation, age and fat cover

It is by head most of the time but if it is going from meat it will be then sold by the Wight
