    If you cook the vegetables and the aromatics first, then you can cook them through, and they will be tender. It will also bring more of the flavor out of them. Put oil in the pan, then the aromatics (ginger, garlic, onions). Next, you put in the chopped carrots (cut smaller, a dice) and cook them completely through until carrots are soft. Then add the other vegetables and seasonings and cook them. Put the vegetable mixture in another pot and clean out the pan. Add oil to pan, and when hot, add the rice. Heat rice through. Then, create a well in the middle of the pan down to the bottom and add some oil. Put all the eggs in that spot and cook (mix) them there a bit, then mix it into the rest of the rice. When eggs are all incorporated and cooked through, then add back to the pan the vegetable and seasoning mixture and mix it together. Now, both your vegetables and rice are cooked thoroughly without worrying about burning the rice or having undercooked vegetables.
    It also helps when you're making this dish to use rice that is not as wet as the one you used. Use slightly less water when making the rice, and if possible, using a long grain rice is better for this type of dish.

    When you peel vegetables with that type of peeler, you move it toward your hand, not away from it.
    When cutting bell peppers, using the point of the knife, cut both the top and bottom ends. Then you can just poke the stem out with your hands and chop them. Make cuts on each side of the center of the bell pepper, from top to bottom. Then lie it on its side, and from the inside, cut out the center (bitter white and seeds). Then you end up having straight and flat (easier) pieces of bell pepper to chop (using the heel of the knife, and bell pepper "skin" down) and decrease your risk of cutting yourself.
    With carrots, you can cut them into 5 inch lengths (easier to handle), then cut them lengthwise, then small dice them.
    When using the knife to chop, the heel of the knife should be making the cuts, not the point. This decreases your risk of injury and makes it possible for you to do smaller dices or thinner slices (also faster).
