They didn’t because it’s a tradition. They are following very strict ‘madi’ regulations. They bathe, pray and start this process without touching anything or anyone else except the equipment in posts they are handling. They don’t wear shorts because, in this occasion traditional upper body wear is a towel like garment, which hinders cooking. Failing to follow any of these will ruin their and reputation forever which cannot be repaired.
To add to the previous answer the place is hot and wearing clothes will only create more sweat. Perhaps they could bring ventilation or air conditioning.
They are preparing in huge quantity to distribute it for free for the ganesh festival. Note that this is prepared in madi- all cooks take bath and untouched by any.. They prepare food offered to god before distribution as prasad.. I respect this process!!

Mm tasty golden dish so big,with nuts and mushroom bits.Yum.We made a box of this years ago and it was just like this ladul ,it tasted great and we didn’t know that it’s made in big portions like this till I came to this.We are however not Indian but we loved it.
I think what people are neglecting to remember is that the hygiene standards around the world are different from those in their own countries. To the people in the video, the levels in this video are perfectly normal and acceptable because their systems are used to what they're surrounded by. When you go there more and more often, it acclimatises to the bacteria and is able to defend itself. People are saying 'this is why you get sick when you go to India' or whatever. I got food poisoning from eating market food in France. It's not because the food was more or less hygenic than where I came from, it's because my body wasn't used to the bacteria that flourishes in France, but was used to the bacteria back home.
