    I know it's an old video, but it's really great. I followed your method with slight variation on the temp and it came out perfect. 11.99 pound brisket at 350 done in 5.5 hours, rested for 2 hours, eaten in its entirety by my large family in under an hour.

      250f. Just make sure you have an independent probe inside the pit so you know your 250f. The control panels are probably off.

      Low and slow. Hot and Fast will get you about 90% of the low and slow result which ain't to bad.

    Did a pulled pork on my new Masterbuilt 40 in digital charcoal smoker and had an issue with the temp starting to tank about about 5-6 hours of smoke at 250. Any suggestions if that happens on a long smoke like a full packer brisket?

    Do you know how long the charcoal will last when the basket is full cooking around 275? That is a game changer for me between a 30 pound hopper of pellets compared to charcoal. I would rather go charcoal and wood compared to pellets.

      What is the Stall? The stall, the plateau, or the zone occurs when smoking or cooking larger cuts of meat at low temperatures for extended periods of time. It is when the interior temperature of that meat reaches about 150°F to 170°F and stops going up. This state can last for hours.

    I bought the same smoker and for the life of me I CAN NOT GET TEMP be what I set it at and don’t put wood in the part can’t believe it always over heats and have to fight it and baby sit it I’m not happy at all with it

      Prolly not. Its priced right and can out smoke just about anything in its class. The only downside for me is its a dedecated smoker. I need more. If you are looking for just a smoker. It is hard to beat!
