I know it's an old video, but it's really great. I followed your method with slight variation on the temp and it came out perfect. 11.99 pound brisket at 350 done in 5.5 hours, rested for 2 hours, eaten in its entirety by my large family in under an hour.
Ryan thanks, buddy. That means lots coming from my viewers. I'm able to drop them quickly because my real job is slow. Make sure you stay tuned for my Christmas show;).. If your USA send me your address and ill send you some stickers. If you want. gallerybbq@gmail.com
Awesome video brother! Brisket is about the only thing I haven't tried yet....but it's coming!! Can't wait for your Holiday show!!! Keepin' my fingers crossed for sure!! Thanks soooo much for all you do for us viewers!
My masterbuilt 40 will arrive this Friday the 4Th from Amazon can’t wait to try your cooks on it this weekend that brisket looked delicious. Tommy your the greatest when it comes to recipes on the masterbuilt 1050 and now the new smoker 40 have a great Christmas coming up and stay safe to you and your family.
The more I see you use the new 40 inch, the more I want to add one to my collection. Of course the wife will want to know why I need another smoker when I already have 4. Thanks for the great videos and can't wait until the next one.
Wow Tommy that’s a big point. I can never find them separately like that. Beautiful looking end product and great bark! I’ll be checking out your Christmas special brother. Great video as always man. Have a great week!
Was really debating returning this smoker as soon as I got it, but this channel made me second guess that and it’s been the best choice I’ve made! Thank you 👍🏻
Looks good. Can't wait to see a low and slow brisket and see how long the coals hold out for good long cook in the Jersey winter. Definitely not going to miss the Christmas show.
Nice new intro music!! LOOKING forward to the new toys !! Hopefully I'll get 1!!!👍👍 My first flat .. bro I wish I'd taken a video!! Hell yeah!! Back Yard bosses!!👍
Just placed a small order of 3 different types for myself and asked under special instructions for your private label, got to try them before I hand them out
Did a pulled pork on my new Masterbuilt 40 in digital charcoal smoker and had an issue with the temp starting to tank about about 5-6 hours of smoke at 250. Any suggestions if that happens on a long smoke like a full packer brisket?
Do you know how long the charcoal will last when the basket is full cooking around 275? That is a game changer for me between a 30 pound hopper of pellets compared to charcoal. I would rather go charcoal and wood compared to pellets.
What is the Stall? The stall, the plateau, or the zone occurs when smoking or cooking larger cuts of meat at low temperatures for extended periods of time. It is when the interior temperature of that meat reaches about 150°F to 170°F and stops going up. This state can last for hours.
I bought the same smoker and for the life of me I CAN NOT GET TEMP be what I set it at and don’t put wood in the part can’t believe it always over heats and have to fight it and baby sit it I’m not happy at all with it
Prolly not. Its priced right and can out smoke just about anything in its class. The only downside for me is its a dedecated smoker. I need more. If you are looking for just a smoker. It is hard to beat!

Coming soon bud and thanks-)..
Just bought this smoker. Glad I found your show. Enjoyed this cook and look forward to watching more. Still happy with your smoker?
I am and am going to use it again soon. Its been to long!
What temp did you say at the beginning 260 or 360? Sorry new to smoking love your results!!
250f. Just make sure you have an independent probe inside the pit so you know your 250f. The control panels are probably off.
@@thegalleryBBQ thank you boss new subscriber!!
@@datsikk100 if u ever have any questions. lmk.
Nice bark, waiting on the next mod
Coming soon!
So with the single wall construction, how has fuel consumption been?
I'd say about the same as my 1050. That said, I've got a little experiment planned for later tonight. Video soon
What temperature did you cook it in?
250f would be perfect!
Hey Tom, how can I get the rubs you use with your labels?
unclestevesshake.com/ tell him you want the Gallery Labels. Also, Comp cow powder is killer.
@@thegalleryBBQ will do, going to put something together for Christmas Presents
@@sneakyblackdog Sounds sweet. You want some Gallery Backyard Stickers to add to those presents. LMK.... USA only:)>.
Just placed a small order of 3 different types for myself and asked under special instructions for your private label, got to try them before I hand them out
Got my rubs in today posted a photo on Instagram
Do you prefer a hot and fast or low and slow?
Low and slow. Hot and Fast will get you about 90% of the low and slow result which ain't to bad.
I'm coming late until the game for this smoker is it still worth it today
For the price it is..... IMHO
Did a pulled pork on my new Masterbuilt 40 in digital charcoal smoker and had an issue with the temp starting to tank about about 5-6 hours of smoke at 250. Any suggestions if that happens on a long smoke like a full packer brisket?
Was it tanking becuase fual was getting low?? You can also email me gallerybbq@gmail.com
Did you ever have to add any more fuel during the cook
Yes. I figured I got about 7-8 hours on a tad more then 3/4 full. I have a few idea.
@@thegalleryBBQ how often did you have to add wood
Is the bottom door still leaking? Kinda looks a lil burn on the bottom left on the top door of hat beautiful paint job!
Very little and stay tuned as my paint job's not done yet:)..
I just ordered my 40" smoker. That brisket looked awesome. What do you use to spritz? Thanks
50/50 apple juice and water. Enjoy that 40 and if you have any questions feel free to reach out gallerybbq@gmail.com
Tommy! I have a question.. what do you recommend for a full packer brisket. In this smoker, Fat side Up or Fat side Down..
Fat side up. Always for me.
Nice video. can wood chips or pallets be used instead of wood chunks?
Yes although maybe not as strong wood flavor as they burn more quick
Do you know how long the charcoal will last when the basket is full cooking around 275? That is a game changer for me between a 30 pound hopper of pellets compared to charcoal. I would rather go charcoal and wood compared to pellets.
To tough to say as it depends on wind, outside temp and fuel used.
Looks great! Did you say 360?
Yes ..... Awesome price
How do u like this masterbuilt charcoal smoker tommy I’m thinking about buying one!!! Is it Worth the money
The 1050 is one of the best pits ive ever owned.
Nice Job, Tommy! How does smoke flavors compared to 1050?
Lets say it's more rich tasting the the 1050. However, more recipes need to be cooked. Maybe a side by side!
Yeah we looking for the new sticker
Next video brother!
what cutting board do you recommend, Tommy?
On my Christmas Show ill have 15% off coupons for the ones I use. You can put your family name engraved on it and the price is right. Stay tuned.!
Cuts like buttah, smooth like buttah!
I love when miss Booger stops by;)......😃😃😃

Right on, Tommy! Hot and fast:)
Hey, thanks Aldan!
160 is stall you are at 177 derp

I bought the same smoker and for the life of me I CAN NOT GET TEMP be what I set it at and don’t put wood in the part can’t believe it always over heats and have to fight it and baby sit it I’m not happy at all with it
Maybe a bad controller??
Yeah sent a notification to Masterbuilt but no return yet
I'm having same issue, mine goes way over the 250 for 3 hours maybe fuel too hot?
Would you buy that smoker again
Prolly not. Its priced right and can out smoke just about anything in its class. The only downside for me is its a dedecated smoker. I need more. If you are looking for just a smoker. It is hard to beat!
