    Spicy Ranch Carrot Chips Recipe:
    INGREDIENTS
    4 carrots (225g)
    1/2 tsp (2g) oil
    1 tsp (3g) ranch dressing mix
    1 tsp (3g) crushed red pepper flakes
    1/4 tsp (1g) salt
    PREP
    1. Cut the carrots into chips with a crinkle cutter.
    2. Toss in oil, add seasonings and air fry at 400F for 12-15 minutes or until you have achieved a good amount of browning.

    Man I wasn't even that into working out but your channel is just gold. Solid creative and straightforward recipes, love your explanations, and honestly lately I've been working out more, partly from just feeling motivated with having some of your recipes in my fridge and with how good I feel after.     Love seeing recipes that ACTUALLY use ingredients that I would normally have. So many cooking videos on youtube expect me to have crazy extravagant ingredients so its refreshing to see some actual basic ingredients.

    Your channel has helped me out a lot. From august of last year until now i went from 298lbs to 226 currently but about 2 months ago i hit a wall! And with the help of your videos i ended up breaking it. I was stuck at at 235 for a while!

    Pro tip, your cilantro leaves have less flavour than the stems. Mince the stems and prepare for a boost in yummy. Replacing the peanut butter with powdered peanut butter could also save a lot on calories since all the fats are removed

    Using the chicken carcasses for stock, broth, bone broth would be an excellent add. Lots of healthy options with soups too. Cabbage and vegetable soup with or without chicken is great for feeling full and keeping calories low. And great for colder weather.

    Try mixing your ranch powder with cayenne pepper instead of chili flakes. I find it's easy to pre-mix and keep on hand for whenever you need it. I keep it in my cupboard for whenever I make wings, and it might help to trim down a few seconds on the prep for those carrot chips. Great video!

    If you wanna make extra sauce (you’re right, best part) use powdered PB instead as it has waaay less calories per serving. You could easily double (if not triple) for same calories and have much more sauce to enjoy 😊

I personally don’t mind the taste, but for my partner, who doesn’t need to watch fat/calories, after mixing his with water, I’ll add a teency bit of sweetener so it tastes closer to PB. Powdered PB is expensive so hopefully if you still have some, you’ll like it w some sweetener! You could also try throwing in a smoothie so the flavor is more diluted!

    Pro tip for the rice paper: use hot water and only dip one at a time. The rice paper will soften within seconds and will be more pliable for rolling while it’s warm. You’ll avoid the sticking and it should be easier to wrap.

    Ate the spring rolls for lunch the last 2 days. My first attempt of rolling sucked, ate them with a spoon.2nd. attempt was much better, both tasted great. I put too much filling in the first time. Peanut sauce is fabulous. I find 2 rolls at lunch along with some celery and carrots lasts me until dinner with no problem. Thanks, Josh.

    Excellent as always Josh! Made the carrot chips with a sprinkling of cinnamon sugar instead of ranch/red pepper - - delicious. Froze them and added to my snack city for re-air-frying later.

    As a viet person never thought I’d see goi cuon on a fitness video!
    They sell perforated plastic ‘plates’ to help rolling if you make them a lot
    Some suggestions: highly recommend adding a touch of hoisin sauce to the pb sauce, gives it that umami savory flavor
    Also fresh herbs like cilantro and mint make a huge improvement

    Cilantro stems are perfectly good! You could mince the stems and use them inside the rolls. Hope you don't waste them!

    the spring rolls look good but u only need to dip the rice paper once in the water very very quickly! just quickly turn it to get all sides. it will be hard at first as u put the ingredients in it but will become soft and perfect by the time ur done rolling.

    Laughed at the comment clowns about your undercooked chicken... amazing how the use of a simple thermometer and probing for perfect temp to get perfectly cooked chicken... it's a game changer for all the meat I cook... spring rolls are a hidden healthy balanced food gem. Great recipes!

    I saw the spicy ranch carrot chips on instagram and was going to try that as well as meal prep some of the chicken fries today. As always thanks for the recipes, it’s always nice to have quick snacks and meals ready to go.

    I am also on a weight loss diet right now. The hardest task is preparing food for me.
    Instead of rice vermicelli, I use a pack of tofu shirataki noodle; 30 cal per pack, ready to use in 1 min.

    Chicken kelaguen, huh? I take it you're from Guam then? I grew up in Barrigada. You're right about adding the shredded coconut to it. That's how I learned how to make it. One suggestion...How about a video on bar-b-que chicken, marinated the old fashioned way?

    An easy, delicious way to cook a whole chicken for the meat is a recipe I adapted from the Best Recipes International cookbook. Take a whole chicken, sprinkle with salt inside and out, put in a Dutch oven with oil on the bottom. Cover with lid and bake at 375 deg for about an hour, until the temp is 160-165, can be more, still good. Cool, remove skin and bones and you have luscious, moist chicken that you can finger shred and pack into 4 oz packs (or however much you want) and freeze. Pull out a pack, nuke for a minute and you’re good to go! Saves messing up the oven with spatter.

    165 in the breast, let it rest, they’ll be some carry over cooking., so the temp will rise but still should let it rest at least 15 minutes before carving, the thighs will be higher in temp 175-190, when cooking a whole chicken. Love the recipes, thank you.

    Great ideas! Have you ever prepped the fully constructed spring roles in advance? I imagine they wouldn't last well that way in the fridge, right?

      They don’t work that great prepped in advance. I think if you individually wrapped each constructed roll in plastic wrap it would help but I prefer just to make them on an as needed basis

      I have kept spring rolls on my freezer before and they stayed pretty well. Maybe freeze one to give it a shot and see what you think.

    That chicken kelaguen seems very appetizing to me 'cause if I can just pull it out of the fridge and eat without having to prepare or heat it up I sure as hell will do that. Espeicially after a night workout. Though I'm curious as to what source of carbs would you pair with the kelaguen?

    honestly the carrot chips are genius! I love eating carrots as is but eating a bag of baby carrots gets kinda boring. I can do it once or twice but then get sick of it and then weeks go by and I'm like is that carrot bag still good? I think the whole mental of oh I'm eating a chip! would be fricken awesome. I might have to try that, instead of using the air fryer though I'd probs throw it into the oven just to cook a large batch

    These are Vietnamese summer rolls. Hands up, I've never liked summer rolls, they have always felt so slimy and it feels like a crunchy phlegm.
    As far as I am aware they arent spring rolls until you fry them and get the crispy coating.
    That being said, yours looks pretty good so may have to give them a try.

      There are Chinese style and Thai/Vietnamese style spring rolls. Chinese style usually fry them and there are some Thai recipes that do the same.

      It’s hard to do that but is possible to some degree especially if you are new to weight training

      @@TheMealPrepManual i think that it's doable if you try to eat at maintenance lvl and track your weekly average weigh ins ( i said try to hit your maintenance cals since it's impossible to track your calories that accurately) if you notice that you losing weight eat a tiny bit more, if the weight goes up eat a tiny bit less.

    My family is CHamoru so most the spring rolls and the Keleguin really hits home. I feel bad though. Because I really don't like keleguin because it's too vinegary for me

      The rice paper you use is literally called spring roll in the packaging and it's an authentic brand 😂

      Hi Viet person here! In vietnamese they are called "gỏi cuốn", which if you take a literal translation is closer to "salad roll" with the gỏi part corresponding to salad and the cuốn part corresponding to roll. I don't think there is one agreed upon official translation though, so personally I think its fine whether you call them summer rolls, spring rolls, fresh spring rolls, salad rolls, etc, which are all different english names that people use to refer to gỏi cuốn.
      Spring roll is a generic term that refers to many roll dishes in asia/southeast asia (both wrapping and filling can vary a lot), so I think it is fine to refer to "gỏi cuốn" as spring roll, but depending on context you might have to clarify that you mean the fresh kind and not the fried ones. In vietnamese we refer to the fried ones as "chả giò."
      Any how this is not super necessary info to know, just extra info for those who are curious. Whichever option you refer to them as will probably be understood.

      I don’t count individual macros. I just try to hit a calorie goal and get enough protein

    Finally, some tasty weight loss food that’s not Buffalo chicken or taco seasoned chicken bowls. I love spring rolls but never considered making them at home.

      Those are something you’ll just want to buy. Without industrial manufacturing methods it would be too much work to make them yourself

    Fun fact, if you toss all the rice paper roll fillings together into a bowl and pour the sauce over it it basically becomes bun thit nuong, which is even leaner because you won't be eating the rice paper
