पारंपरिक रूप से उड़द दाल की कचौड़ी उड़द दाल के दही वड़े वाले वड़े बनाकर फिर उनको ठंडा करके हाथों से भुरभुरा करके मसालों के साथ दुबारा भून कर तैयार किया जाता है । इस विधि से तैयार मसाले से बनी कचौड़ी लंबे समय तक खराब नहीं होती ।

ये तो मेरी फेवरेट है Sunday सुबह बाजार में मैं और बेटा खाने जाते है अपने गुड़गांव में महसूर है जैन कचोरी वाला और मोनू कचौरी वाला और फिर घर के लिए ले के आटे है सब के लिए इसके साथ सब्ज़ी में वो एक मेथी की चटनी डालते है मीठी वाली
और मोटी हरी मिर्च तली हुई
लेकिन आपने आज बहुत आसान तरीके से बनानी सीखा दी है
अगले रविवार यही बनाएंगे ये तो मज़ा आ गया

Very well explained chef but I would like share a litte tip that if you add a little amount of metha soda in the prepared dal mixture when it has completely cool down just before stuffing it into the Kachori then this will not only make the Kachori puffed up but give the unique market like taste also.
