People don't eat many, unless more are used in processed fish in restaurants. Many small bones, plus the pollutants the fish pick up while bottom feeding, are concerning. Your pets might help out. 3 years ago a couple companies set up to use them in pet foods. They can also be processed with soybean meal and fed to farm raised fish. It might also be of interest to introduce additional catfish, bass, crappie, and gar which like to munch on small carp. I wouldn't be surprised if they are processed into protein meal for other animals, like poultry and beef.
So sad to see the area between the Mississippi river and the ILL. River filled with Asian Carp. In the 1960s and early 70s that area was a great family spot for weekend boating. Now however it's destroyed from them damn Crap.
As long as the carp are big enough, and come from some what clean and cool water, yeah, you can eat them. If you've ever had a fish sandwich from a fast food restaurant, it was most likely carp.
