- In Xian, Lantian County, Shaanxi Province, there is a folk song: "On the 3rd, 6th, and 9th days of the lunar calendar, people gather at Jiaodai. Half a catty of beef, half a catty of wine, everything you need for eating, drinking, and dressing."
This video records the grand scene of Jiaodai Fair, the largest and most lively fair in Xian with a history of hundreds of years. On the first market day after the Lunar New Year, private cars and tourist buses filled Jiaodai Town, with visitors coming from Xian City, 40 kilometers away, or the nearby Bailuyuan Film and Television Base. Curious tourists and city dwellers come to Jiaodai Fair to leisurely stroll through the market and taste local snacks. There are many unique local delicacies in Lantian, such as old sugar, rotten beef, scallion pancakes, flower cakes, buckwheat noodles, potato cakes, steamed cakes, red bean rice, and sugar cakes. Visitors can experience the rich local flavor of the Qinling Mountains and feel the lively atmosphere of Jiaodai Fair. The distinctive market culture of the Guanzhong region makes tourists feel amazed and reluctant to leave.

I've seen this in the context of West African cooking, pounded starch turns into a big dumpling. People eat it with their fingers, dip it in some soup or sauce. In the US, when we are making mashed potatoes, we try to avoid this outcome, not mash it too much or it loses its starchy texture and becomes rubbery as we see here. But here it's not an accident, with a big stone bowls and wooden hammers. This is the first thing I would try, and then fried jelly which seems impossible, then? Other fried cakes? The tea looked great, I want to live near this market now. I always think that. The video is good for me, I enjoy the comments, get some general idea of what we're looking at. I like to hear the remarks of the vendors, and something about prices... is this a good price? Has the price changed recently? I never get tired of this kind of content.
