    I've been using Japanese Damascus in the kitchen for about 20 now along with some German for certain tasks.
    I can appreciate the knife skills here but being a lover of audio, the sound of steel banging onto wood gets to me fast so I learned a style that is almost as fast and makes little or no sound, now I know, I know, 95% of the people think I'm crazy, don't care, I care about my head and the sound of carpenters working on a project every day in my kitchen would drive me nuts. I still gotta have a super sharp knife at all time and thats to this channel and others, I am always happy with the blade performance of my collection. Also, I often find my self cooking in the middle of the night and know I won't be waking anyone up before the meal with banging out morse code on my chopping block, my smoke alarm can wake them up just fine a little later.       Never be afraid to show rather than tell. I remember 15 years ago when we didn't have the prevalence of smartphones with these cameras. Now everybody basically has the ability to record everything and show exactly what they are talking about. I think this is important because sometimes things seem perfect in our minds but then when we empirically show it, It doesn't quite come out like the movie in our head.

      Funny enough when the knife is crazy sharp, it doesn't make your eyes water because it doesn't crush the cell structure of the onion.

      @@Heizenberg32 Yeah, from my experience when I get onion gassed it means I need to sharpen my knife.

    Gorgeus blade. Have a magnacut custom chef knife from aaron johnson 64 hrc that ive thinned to damn near razor thin at the edge. Absoluttely love it pure performance blade

      This one looks like a gyoto, which usually have a flatter profile than a french or german chefs knife, and have that distinctive curve at the end where the spine does not drop down to edge until like that last 1"-2". They work really well for chopping and pushcutting. You can still rock with them as well, though they have less curve which can make it a bit harder.

      Those are just caramelized.
      Look up "Maillard Reaction"

    Looks very nice but I've never seen a bloke stop and sharpen a knife while cutting onions. Joke.
