The consostency if the dipping coating was right, but we always made it with cocoa powder not chocolate!

Cake gel is not fat, but a compound food additive.
Lamingtons are a vanilla sponge cake dipped in a chocolate sauce then into coconut. The SP is a commercial ingredient.
