Dont forget to put some benches or comfy chairs in there so you can be comfortable when you are in the tornado!!! 😉 I cant wait to see the update! Ive wondered about the roof on the root cellars if they could be flat or needed to be domed...
I built a cellar house. One thing that is nice is an insulated stainless steel door (due to moisture and corrosion). Companies make stainless frames and doors for walk in freezers. Another item is white ceramic tiles. They reflect light, easy to clean, easy to keep microbes down. After putting a certain amount of fill over the top, a layer of plastic can be put down (to act like a roof over an area of soil beneath and out from the building for 6-10ft. The dry soil beneath will help maintain a more even temperature in the building. Water creates wicking of temperatures. Styrofoam can also be used outside the structure. Most of this info can be found by studying earth built homes and structures. Greg has a beautiful and well built structure.
Greg I’m in Northern Ireland. It’s 30min $50 on plane away from England. (Still in the UK) if you want a short vacation and maybe try and pint Guinness in Dublin you could hope over I’ll host you guys for a few days.

Suggestion, if it's not too late and they haven't backfilled it put a double cleanout sweep with an access pipe up to the ground level with a cover on it on the back wall in your weep hose/pipe so you can clean it out every few years.
Looks like they know there concrete ,ICF blocks would have been a good option too there getting more and more popular plan on building a ground up home with them soon

Two and a.half decades ago, an F4 tornado hit Ohio, where a guy was sitting upstairs, eating dinner, watching TV when it direct hit his 2 story, rural, house. The next day, there was only a deep muddy hole where his house foundation used to be. The tornado sucked up his entire house and all concrete block basement foundation down to the bottom one or two layers. Even most of his concrete driveway was peeled away in sections and gone. Houses not far away were unharmed. His body was found slung high up in a tree miles away. Yeah. What a way to go. I didn't know the guy but someone showed me where his house used to be - I was physically there- a week or two after it happened. I kept asking "where" it was supposed to be ? Then I noticed irregular splotchy pieces of broken driveway slab and a few concrete blocks in a big muddy hole was the only evidence any structure had ever existed there. To see the after effects of raw natural power, in real life, is just horrifying, let alone being there as it happened.
That is a very nice shelter hopefully you never need it for that, but having food stored in there is worth every Penny. Just a question in the background looks like some Shitake mushroom logs, if so I would love to see a video on how that goes.
I do not know why safe rooms are not automatically built in. Most can be put under the front concrete steps of most designs. You already have it all except perhaps enough depth and a strong door. This could be part of code and cost little extra if any.
If you don't mind me asking, how much did your storm cellar cost you when it was all said and done.... at least a ballpark. I'm guessing at least $75k at least here in Virginia.

What to do If an atomic bomb war was started since it looked like the cold war was heating up ! basically hide under a desk or jump into a ditch is what I remember. Oh They could have said something about covering your head with newspaper but that might just be a dim memory of a nightmare. I am so lucky I have never been in the path of a tornado they are very rare here! I hope it stays that way For you and Jan in the future. I forgot to tell you that I got more lamb and other grass fed meat at the farm store Including a frozen rabbit is in one of my freezers . May I suggest you make some of the shelving from cedar planks. You should have a few of those.

Collapsable cots that you can hang from the ceiling is a better idea
Build a Full Shed on Top.
It’ll keep the cellar cool and provide Mushroom equipment storage. Well, that’s what I’d do.

We may do something like that. I am also looking at our natural farm cut cedar for siding it possibly.

Code doesn’t exist in many rural counties outside of the city limits. Most living rural prefer it that way.
What does something like that cost ?
Wouldn't the heat from the freezers negate the natural earth cooling of the cellar? Or is it a cellar just for canned goods?

i am concern the water in pond may someday flood the cellar. The floor of the cellar should be 2' higher than the pond damn.
The lake spillway is 2 feet lower than the cellar. It will never flood.
