Yoy guys are freaking amazing!!! I love what you are all doing. I too live in the city and eat plant based foods, all of our extra cuttings/trims and raw left over veggies go into my compost, if the veggies still have some good life to it I'll freeze it until I have enough to make veggie broth.
This is absolutely incredible! I hope here in Chicago we implement a similar system, or expand an already existing one. I love how this ties into environmental justice too. Environmental racism is often overlooked but fighting against it should be a priority!
Hey, I don't know if you guys thought about it but I think you guys should go door to door and see if people are willing to keep a bin in their home for compost and you pick up weekly.
It's madness that people on bikes are doing this in NY. In Europe (London) it's totally normal for the local authority to collect food waste with the usual rubbish collection. Been doing it here for years. All food in our home is sent for composting.
