when you're an experienced pianist and know many songs you get to know how to make your own and easily recognize other patterns in sounds, that's called, pitch and people like Fonzi are really good at it. If you want to see just how far people can go with it, look up Marcus Veltri, he's an incredible pianist with excellent pitch and can basically do near to this is by listening for like 30 seconds.

When you're experienced enough, you can actually get to a point that you can memorize and identify notes just by listening to it.
