0-400 Wings | Grilled Chicken Wings on the Recteq Bullseye

  • Recently all the rage on Facebook BBQ groups is 0-400 degree chicken wings so I had to give them a go myself. I cooked these chicken wings seasoned with Meat Church Holy Gospel on my Recteq Bullseye starting with a cold grill and let it climb to 400 degrees until the wings hit an internal temp of 185 degrees.

    Just fixed a jammed auger for a mate that has one of these grills. I ran a test cook batch of wings using your preferred method of 225 for an hour and 400 to crisp. Used Slap yo Mama as it was handy. Fantastic results. Thanks for the tip.

    0-400 works better when wings temp at 205°-210°. They’re crispier and still moist.

    Nice technique! We just got a Bullseye and are stoked to smoke. First cook was a pretty basic smoke-and-sear tri-tip and it was off the charts delicious. Liked and subscribed :)

    400 for 20 minutes is perfect every time. I do the first 10 minutes skin down. they slide off the bone every time and the skin is perfect.

    just got my bullseye about 2 weeks ago. wings are.....basically an addiction so i appreciate you still going through and telling how YOU cook them as timing and temps are still a bit intimidating for me! loved the video and i will be trying one of these two methods tomorrow!

    On my PB850 I've never had that white smoke when you first start it up. It's always blue for some reason but I still let that initial smoke go away before starting. I'm sure I can easily do this 0-400 without worrying about that initial smoke.

      I have never experienced any dirty smoke flavor from a pellet grill. You should be fine.

    Man I with you on the slow smoked wings. 225 -300 for 45-60 mins then to direct heat to crisp up. Great video though!

    Well that white smoke tastes like crap so this method is crap. Slow smoke and flash fry is the way to go.

    I like mixing the Voodoo rub with the Honey Hog rub for wings, ribs, and pork butts.

    with your method at 225 for 1 hour ... how long do you go at 400?

      Until they are done. I like to take wings to 185-199 F so total time is usually around 30-40 minutes.

      Just keep an eye on them after 30 minutes because depending on wing size they may get to temp before an hour!

    Try 325 1:15 mins crispy outside juicy inside. You guys have a grease problem w bullseye

    I’m with you on smoked and slow for a bit then crack up the temps unless I’m using the poortex, in which case it’s pretty screaming hot all the time. Still look really good. Have a great weekend Mike!

    I just ordered a bull's-eye the other day, now I'm worried because I see all these videos saying it runs anywhere between 25 and 100° hotter than the set temperature why can't rec teq get it calibrated right?

      You can calibrate to make it match. Not that big of a deal for me as long as it’s consistent.

    Have you tried LO for one hour then 400? Wonder if there’s a more Smokey difference than 225.

    I take frozen wings from Costco. Cover in oil and add seasoning sometimes some hot sauce then cook at 375 till 180-185 internal. Thanks for the video!

      I would think the oil would make them crispier. I use oil on mine as well.

    I had given up on making wings on the smoker. Then I tried them on the Bullseye. I used Holy voodoo from meat church, and smoked for 1 hour at 200, then cranked it up to 350. The best wings I've ever made. My bullseye is running about 50 degrees higher... I've learned to adjust.

      Yep that is how I normally cook them and it’s the best method IMO. Poultry and Pellet Grills are the perfect match.

    Nice video. I’ll have to try your way. On my bullseye I normally do 375 for 50 minutes to an hour flipping after 25 minutes or so.

      @@mikebowerstv I also noticed you cook the wings in the middle of the bullseye. Do you prefer cooking in the middle? I normally put my wings along the outside.

      I usually only cook in the outside of its something fatty like a burger or when in riot mode.

      Not very long just until temps reach about 195 (I like my wings a little done). Usually around 20 minutes. I’ll make a video on this soon!
