This is fun and it seems obvious the chef had fun doing it. The techniques showcased here are the star of the show. I’m most impressed by the controlling of temperatures while using natural wood. He baked bread on open flame in a stainless bowl with minimal scorching. He could take a bow there. The rib recipe adding water to oil to modify the cooking time is great. The salsa technique was still there in charring the vegetables. The honey came out of left field to me but everyone has a different pallet. The presentation of pulling out the bones at the table gave me a laugh all chefs are going to add a little extra. So much fun.
Honey has a strong flavor while mixing well with savory palettes. I use it a lot in stir fry without adding noticeable sweetness. Sour and spicy are the top two flavors for masking amy sweetness, as well as salt to boost umami.

Mongolian is nauture is so lit, also almost nobody lives in these steppes makes it paradise for introvert like me.
There are wild dogs, wolves, bears and millions and billions of mosquitoes and flies. Not sure if you will even last a night….i know I won’t alone.
