Sounds yummy. I've always heard that if you continuously stir something while deep frying, it causes fissures on the outer part and can cause it to absorb oil. To ensure it sears on the outside and doesn't absorb oil, don't continuously stir.

This is much different than croutons or bread crumbs and would be good with ground mustard, honey mustard or some horseradish.
