This looks amazing. I would add ham instead of bcon, becuse bacon for me is too smoky and I do not like bacon. However this entire recipe looks absolutely amazing!

This is even better if you rinse the starch from the potato until the water runs clear, then soak the potatos in cold water for 1-2 hours.
