I had to sign a paper that basically said, we'll take your money to stop the payment but if we accidentally cash it you're responsible. I questioned the manager, she said, it doesn't say that. I read it to her, she said let me call you back. She did and told me it was an "industry standard". I also had to pay to wire the money. That check never did surface.
Even with that sign, if somebody, for example, went to the coat check area when the attendant wasn't there and stole coats, they're still responsible. It's like putting up a sign saying "not responsible for underage people drinking" Signs don't absolve you of stuff like this

This looks like it was filmed in the mid 90’ that same coat would be $2-3000 now. That’s why people buy high end leather and fur coats, to wear them out and show them off. Of course it depends on the establishment but a high end club, theatre, bar, hotel, it’s the management and the management’s staff that are responsible for keeping an eagle eye on the guests coats, not the guest. It’s not a ‘free service’ either, it’s included with the cost of the service, that’s who you’re marketing to, that’s the type of person you want to attract to your establishment, many people easily spending a thousand or more on dinner, drinks, show tickets
I would never have taken a really expensive coat to be put in a coat check. There were always people upset at clubs because things were missing. I think here in the UK the signs were different and said something along the lines of items are left at owners risk.

It sounds to me as if the sign refers to objects that are in the coats. Their employees do need to give people the correct coat and they did not.

Well actually Fine dining restaurants, country clubs n yes bars have coat checks. And many carry insurance on lost items.
