I am now converting an Epson 3000 with many changes, also it will have 3 channels to print white ink..

Usually the owners manual provide instructions of how to do just that...

Sorry, I do not have any instruction of how to build your project. I did most of my studies by watching some of the videos posted here and in different forums..

I really want to do this, how has reliability been over the last 3 years?

It has been good, however I have not printed on any black or other dark color shirts yet due to the white ink dries up pretty quick in the print head unless you flush the white out of the ink head and install in place cartridge filled with flushing liquid.
