DUCK BREAST : 473 g
Salting by burying : 12 h
Smoking with beech wood : 5-6 h
Drying in electric cellar at 11-12 °C and 65-70% humidity : 11 days (37% loss)
Final result : 299 g

Nice clear and short video! Thank you. I bought 3 nice duck breasts this morning, and I'm going to cure, smoke and dry these. I prefer to do an equilibrium cure with nitrate salt, just not to waste so much salt. Really looking forward to the end result!
