If you tied your necktie too long, would you take a scissor to it, or retie it so its the right length? Why don't you show how to tie the biots in so that they are the same length using the natural taper of the biot? Isn't that what fly tying is all about?

The video you have problems with simply shows a quick and easy way or tying in the horns to create flies that catch fish. Kind of the another thing that fly tying is all about. Also, most of the time, there is no need to trim the first biot to exactly match the length of the second, they are that close in length and with the other parts of the fly in place, you simply can't discern the difference.
Good luck. I went to the Dundee, MI, Cabela's a couple years ago and they had very little fly-fishing gear in the showroom and far less fly-tying materials than I have in my basement. Kind of sad, considering that selling mail-order flies is what started the company. I believe that Cabela's is now a subsidiary of Bass Pro Shops, anyway. I prefer to order from Feather-Craft or J. Stockard. There are also some good deals to be had on Ebay, provided that you know what you're looking for.

Would it be feasible to offset the bottom biot longer than the top to result in final even lengths?
By trial and error, you should find an effective way to stagger them at the tie-in to produce an even length after folding.
You do this differently in your prince nymph video. Which way is better?
I have, over the years since the Prince Nymph video was produced, come to prefer this method.

This is great! Works on my jigged princes like super slick! Saving me time and they look great every time. Not liking the biot tail tip though.
Once you see which biot comes out longer, learn to fold them the same way each time and stagger the length accordingly at tie-in.
