In traditional recipe (pre Pressure cooker era) we make black masala paste (burnt onion, coconut, ginger, garlic, NO GREEN CHILLY) fry this paste in 2-3 tbs oil for few minutes, then add Garam masala powder (you adjust THIS according to spice tolerance) and then put lamb in it and let it cook in water. It takes substantial time (between 60 min to 90 min) but tastes much better than pressure cooker.

If u add the onion and coconut together in grinder mixture is more chunky or coarse. So if u want fine paste then first grind coconut then add onions

You can do it with a variation -- don't add green chilly ,add black pepper and birista (fried onion)
