I have been canning potatoes for a couple of years. If you find a big kettle, fill with cold water and swish your potatoes for a while. The water in your jars will be much clearer after processing. If you water bath your potatoes, add a tsp vinegar to each jar and you only have to process for 2 hours.
I have followed the national Institute for safe canning potatoes and I have found they were more mealy. They were not what I expected. I had a hard time making JoJo potatoes or french fries when I was using them. They were basically only good for mashed potatoes or potato soup.😮

We are at 876 feet. At anything over 1,000 feet, you do need to make some adjustments. According to the Ball website, at 3,000 feet you would need to can using the 15 pound weight. You can get more information from their website here: www.ballmasonjars.com/adjust-high-altitude-canning.html.

You need to try how to can following the Amish way. I never pressure can ever. But hot bath is what I do. I'm learning also.

I water bath potatoes! For three hours ! Still add salt and cold pack ! Potato work so good don’t taste funny ! Great for fry mash baked
