do you preheat the oven to 120°c, put in the macarons with the door open at 90°c while it is still preheating, then turn the dial up to 140°c and close the door to bake it? (so during the beginning of the baking period, the oven is not at 140°c yet since it is still climbing up from 120°c?) sorry if this is a confusing question
She warms the oven to 120C, puts the macs in for 2-3 minutes (during which it may cool quickly to 90C before warming again to 120C), then closes the door and raises the temp to 140C. Remember, Sugar Bean has a very good commercial oven. Mine will never warm back up to 120C with the door open, so I close the door after 2 minutes and bake for longer. Actually, I warm it to 150C, dry for 2 minutes with door open, and then just close the door. We can't always do things the way the professionals do them.
