I grew up on gumbo. Jambalaya is completely different than gumbo. You made it similar we do not cook the meet separately then add to gumbo. But looked like gumbo at the end. For first time making I think you did good.

I’m so amazed at how bad restaurant gumbo is in Louisiana. 🤯A good chicken and sausage gumbo is so easy to make. Just take the time and make the roux. I grew up west of Baton Rouge.

This isn’t the traditional way gumbo is made in Louisiana, this looks like a seafood stew, an étouffée, but not gumbo. I’ve never had gumbo from a restaurant that I like, only homemade. Looks yummy however.

I did not seen no file’ powder being used. File’ makes gumbo taste like gumbo. It’s dried and ground sassafras leaves. You said you are in Dallas. You can get it from Albertsons. If it’s not on the shelf then request it to be ordered. I’m sure their locations in Houston has file’ powder.

Also, baby, you cook with a lot of salt; your food has a lot of carbs with that rice and yams. Also, you cook with sugar; next you use Goya packets with additives, sugar and salt, baby. So, let's not isolate southern food as this extremely unhealthy food tradition. Please be more knowledgeable and respectful to our food tradition. Something can be unhealthy and not fried. Many Caribbeans and Africans use a lot of salt, eat sugary foods, and can go overboard with eating carbs rarely having two vegetables on their plate. Even with that, I am aware that there are healthy food dishes among these groups and don't misrepresent their food tradition as nothing but high carb and salt based food. Southern style food, more specifically, soul food, is plant based. We have many food dishes that aren't fried. Collard greens aren't fried, turnip greens aren't fried, neck bones are not fried, black eyed peas aren't fried, baked sweet potatoes aren't fried, corn isn't fried, boiled okra isn't fried, hammocks aren't fried, lima beans aren't fried, and the list goes on. My grandmothers are Black American women from the South and most of their cooking was baked, broiled, and boiled. Not fried. Also, they cooked a lot of vegetables including roots vegetables (turnips, yams, and sweet potatoes). They also cooked a lot of beans and peas. I would encourage you to learn more about our cuisine with less judgement towards it as I am learning about yours with respect, please. Also, I don't think you need to do American dishes. I love learning about the different cultural foods in the Diaspora. You have a niche and it works for you. Americans see American style cooking all day and everyday. You are promoting your cultural foods and that is awesome and needed in this UA-cam space to promote the diversity of cooking traditions and to foster an appreciation and respect of different cultures and their traditions. I got hella offended at you talking about Gumbo! Authentic New Orleans gumbo is how it's supposed to taste! Also, adding bacon does not change the fact its Seafood or not! Even if you add chicken and have shrimp in it it's still called Seafood Gumbo! Gumbo is gumbo, NO versions of gumbo honey!!!
