COOKVLOG: STRAWBERRY WATERMELON CAKE RECIPE (Recreate Blackstar Pastry in Sydney)

  • A LONG ONE, BUT I PROMISE NOT THAT HARD TO MAKE! (EXCEPT FOR CUTTING THE WATERMELON PART)
    ALMOND DACQUOISE:
    150g almond meal
    150g icing sugar
    5 egg whites (180g)
    150g sugar
    ROSE-SCENTED CREAM:
    500ml cream
    100g icing sugar
    15g powdered gelatine
    25ml water
    1 tbs rosewater
    WATERMELON:
    ~1kg watermelon
    2 tbs rosewater
    2 tbs white sugar
    STRAWBERRY JELLY:
    250g strawberry
    150ml water
    3g gelatine powder
    1 tbs sugar
    GARNISH:
    20g pistachios, chopped
    dried rose
    ---

    Thanks for this Stephani! Is it ok for me to use 15g of gelatine sheets instead of gelatine powder? I don't like the smell/taste of the powder

      Hi! yupp that's just the some extra Rose-scented cream, same as the one I used in the cake before and after the watermelon :) good luck!

    Hai chef, can i skip sprinkle rose water on the watermelon. Cause it's hard to find food grade rose water in my country. Can i just use the sprinkled sugar? Or what can substitute the rose water? Thankyou😊

      heyyy, unfortunately rosewater is quite mandatory in this recipe, since that’s what gives the whole cake it’s really nice aroma 😟 hope you can find a legit seller soon! 💪🏿

    Great video! Can you tell me what you put in the cream mixture ? Is that caster sugar ?? Its not on your ingredient list

    Hi , I've try making the cake ... everything is good but just my cream melted real quick and also when I try to cut it ... everything fall apart because the cream is not firm enough ... any idea what went wrong?

      hi there! couple of things might be the reason, either the cream could be under whipped, or the gelatine wasn’t mixed thoroughly in the cream, or it’s not chilled long enough for the gelatine to set the cream :)

    Normally after srinkle the sugar on to the watermelons, how long do we need to let it rest at the side?

      minimum of 30 minutes. or if you do that while you start with the other components, leaving it the fridge, that’ll be ideal ☺️

    loved the video!! is the gelatine power part in the cream necessary? ive been watching a few videos and noone uses it
    just wondering because i want to try make it as well :))

      it’s very important :) i tried making it without gelatine and although it does hold it shape quite well when it’s cold, it’s very hard to get a neat cut. the gelatine is to stabilise the cream and hence the whole cake :) let me know how u go! hehe

      I bought one at IKEA, it’s adjustable and they have square ones too. The round on was 5.50 today. It’s called Tartbak

    hi, i only have one 7.5 inches round pan at home. can i know the measurement for ingredients ? and does that mean i have to bake twice but will the batter becomes watery ? 😅

      helloo! since the cake pan you have is a bit smaller than mine (i used a 22cm cake pan to bake and 20cm ring cutter to cut), this recipe will give you a slightly thicker almond dacquoise (maybe try 86% of each ingredients by weight?)
      unless you mean you only have one round pan, then i suggest doing half a batter at a time, otherwise the egg white will deflate 😁

    Can i make the cake 3 days in advance? I afraid the watermelon would become watery. Please advise.

      i reckon 3 days are still ok as long as the whole cake are eaten on the third day 🙂 just make sure you strain the watermelon longer when you make the cake to extract more water out after adding the sugar

      Jackie Pham baking stores/gourmet food stores usually have them. but you can always buy it online :)
