ultrasonic sensor operates at 5 Volts while ESP8266 NodeMCU operates at 3.3V only. There is a fluctuation in the ultrasonic sensor readings because of incompatibility with the timings due to voltage difference.

I don't know how to program the GSM to send message when the sensor detected warning level ( 75% )

No optimalization, WiFi adapter is active but not used.
Hope u will not run this on battery, because it is then totally useless concept.
Also why whole NodeMCU board you used?
This is project for ATtiny85 and not 30x bigger and 40x faster ESP board...
