You have probably already noticed this but your crafter is crafting a seed after each melon because the observer pulses when the torch goes on and when the torch goes off. So the crafter gets a double pulse. Get rid of the observer and lift that redstone torch signal with a short torch tower or something and it will stop doing that.

Filtering the melon slices from the pumpkins before they go to the crafter would solve the pumpkin issue. As for the seeds, it is because of the double pulse. Someone else in the comments suggested a solution with the torch tower, but I think there is also a way to do it with comparators in subtract mode comparing to a signal strength of 9, but I'm not positive about specifics. I just know it's the same principle as Tango used when he fixed Pearl's bone farm to make bone blocks and not white dye. It's also the system Pearl replicated to turn bamboo into blocks not sticks in her bamboo farm. I know Xisuma also dabbled with the concept but I think his solution may have been more complex. If you want some collaboration rather than playing with it yourself, I'd tap any of those folks and see what happens. Alternatively, you could just slap an item filter on the melon chest to separate off the seeds to go through a composter and supply you with bone meal.
Redstone can be made purdy, but only if you respect the space it requires to maximize its redstoneness. It's better to build a building around a farm than trying to fit a farm into a building. And when in doubt, hide it underground like Ren has done. Professional Minecrafter.

I love the lore you’ve been doing this season, it’s inspired me to use my imagination and make my own stories and characters. At 17:57, the issue with pumpkins going into the crafter is happening because of the input hopper on the far right, the one that's pointing down into the sideways line, just above the pumpkin filter. Make that hopper *not* point into the hopper below it--point it sideways into nothing instead, and you'll likely be good. The problem is that because every time hoppers go to move items, they both "push" and "pull". So the hopper above the filter "pulls" an item into itself from the hopper above, but it also gets an item "pushed" into it by that same hopper. So it can potentially get two items in it every time. The filter hopper below it, however, can only "pull" one pumpkin at a time out. If enough pumpkins flow into the system fast enough, eventually the hopper above the filter keeps a pumpkin in itself juuuust long enough to "push" it on down the line, into the crafter.
I love how pleased ren is with his simple pumpkin farm and mellon crafter than doc comes by to "help" and procedes to release a warden on the server. Also who the hell was the clod who left a raid on the man's front lawn?

Ren, to solve the issue with the autocrafter, consider using an item filter for the melons as well. I think the issue with pumpkins going into the autocrafter is that sometimes too many pumpkins are pushed through the system for the first item sorter to accept, so they next go to the melon autocrafter. To deal with this excess, you could install an item filter for melons, and looping the hoppers around, so that any excess melons or pumpkins can be sorted the next time. Also, to solve the melon seed issue, consider only triggering the autocrafter when it is full of items. It seems like it can sometimes be triggered when only one item is in there, which then produces melon seeds.
I'm also a fan of pretty redstone and experience the pain of inefficient farms. Love how you have managed to combine the efficient farm with the pretty one. Love the gigacorp floor Ren.
Ren, if you're not already, reconfigure the item stream to filter out pumpkins first and send everything else (should be 100% melon slices) to the autocrafter. Pumpkins are produced 1:1 for each pumpkin grown whereas melons are produced many:1 so this setup should be most efficient.
Noice work, Ren! This episode represents a ton of work but having a faster farm is definitely worth it. You’re future-proofing your emerald needs for the rest of the season. And I do love the GigaCorp stained glass floor!

Yet another Pumpkin/melon farm idea: try a redstone lamp above the observer with a sticky piston w/end rod on each side of the lamp to do the harvesting (and provides lightning)
I’ve been going thru a really tough time lately and I’ve been watching Rendogs hermitcraft videos lately and oml it’s helped so much!! He’s very entertaining and always manages to make me smile I must admit that I’m slowly learning all of this redstone because of him, even if it’s just.. renstone.
You do a great job and help to inspire someone new to the game that’s learning fast. If you filter the melon pieces like the pumpkins it will keep the odd pumpkin from getting into the crafter. I ran into this while fitting the auto crafter into my auto farm area. Much more to still learn but I went with a very simple 9 redstone, 1 comparator, and 1 repeater trigger for my crafters. Hoping for something a little more compact to pop up in the “how too” vids. Keep up the great work, and never think you can’t make it pretty. I live for the details.
Even dough it wasn't intentional, I like the concept of having a pretty farm, or a Renstone farm if you will abow ground and a proper redstonefarm hidden away in the basement.

Sorry Ren... That math doesn't math... 4 stacks combined of melons and pumpkins is 2 stacks of pumpkins. Where the other tower made 2.5 stacks. While the first tower does make more, it doesn't make more pumpkins. Although, I bet if you turned the melons into bone meal and used that on the pumpkins, it would make it worth it.

I didn’t know when I suggested the glass say GIGA it would snowball like that 😅. (Smartypaints 😉 also I share a YT acct with my husband. Im not Michael. Lol), but it really does look great. I wasn’t in the first part of the stream so I didn’t know there were going to be villagers down there too. So at least the work will be seen. Your excitement about the branding and determination to do it was very endearing and quite contagious. I do love your streams. That said gigacorp seems like an entity that would plaster its branding all over its products hence the farm label.
I used ilmangos pumpkin farm design but then I started to afk for days on end and ended up making 4 of the farms connected to 1 lever to turn it all off and on
assuming you have working filters on the hopper line, maybe the items are coming from the chute up top, in which case you could add a couple more trap doors to encase it all the way

A simple piston behind the last observer will do the trick too, gives a single 1 tick pulse.

I think he is filtering, but his overflow hopper is feeding directly back into the crafter from the other side

The redstone was causing lag because of light updates most likely. Putting torches down there or any light would help

Ren you can use Fletchers and convert them until they give 1 emerald per stick. That way you can have 1-1 emeralds to sticks and use wood for it

I reckon you could replace the 2 silos with one massive one if you extended the big farm up to the silos height? One build 2 silos type thing maybe?
If the pumpkin ends up in the crafter move the melon filter first, or reverse the hopper feed line
Or add a second pumpkin filter to catch any strays that get past the first filter.

You may want to separate the pumpkins from the melon slices before they enter the system altogether.
The moment when you see where some simple easy fixes can be made to someone's Redstone but its pointless trying to explain in a UA-cam comment.
The Redstone is double pulsing causing it to make seeds it's an easy fix. just need to change the Redstone a little.
