I would imagine that both bike and car are limited to 299kmh - which is why they sit at the same speed. I imagine that with the limiter removed, the car would be faster at the top-end due to greater displacement. The bike will beat the car to its top-end due to greater power-to-weight ratio.

Starting from a full stop you would embarasse the Merc, after 250 km/h it has an higher top speed than your '04 R1, and it's hard to keep up due to wind blast and highway "corners"

The C63 is fast but not by bike standards, a delimited bike would go maybe to 310 or 320 kph. You do know that MotoGP bikes reach 217 mph (although also being limited for safety reasons).
... going back to the first comment point yes there a few thing were cars are much better than bikes. The first is SAFETY then braking, turn stability (grip). Generally bikes will excel in acceleration, deceleration (although this one is limited by CG). Top speed is a senseless topic because if you kept adding power any vehicle can keep going faster (e.g. rocket trucks, spaceship and even boats). You'd never be able to perform a swerve manuever on a car at 200 mph, but most likely you'de be able to change direction quickly on a bike than in car (this is do to bikes having a smaller profile and being lighter which helps with inertia). Just check Isle of Man TT to feel the power...
Aumente a relação de marchas da r1 para você ver, essas motos possuem uma relação peso potência e aerodinâmica absurdas, porém uma relação de marchas curta, se você aumentar a relação dessas motos você irá conseguir uma velocidade muito maior do que qualquer carro superesportivo, um exemplo disso é uma hayabusa turbo chegando a 448 km, nenhum supercarro chega a essa velocidade, só um hipercarro, e digo mais, ainda tem força para chegar em uma velocidade ainda maior. É questão de física, aerodinâmica e peso potência melhores do que qualquer supercarro, mexer na relação de marchas e pronto.
