It’s ok to cut the bread seed poppy seed heads before they are dry with the little “windows” showing?

Great question! Really, the best thing to do is to either wait, or pull the whole plant and let the poppy seed heads dry on the plant until the seeds shake inside and pour out of the little poppyseed sprinkling gaps. Having said that, I'll often pick them early and fresher just to include them in arrangements and they seem to dry out just fine even after they've been cut a little early. 🌸
