I like both techniques, but learned (from another designer) a much simpler way to insert lace (and you never accidentally cut too much or too little off.) Simply pin the lace on the rectangle where you want it to be. Then use a very narrow zigzag stitch on both edges of the lace. Once that's done, you just trim the fabric out of the back of the lace. Same look, with a lot less margin for error.
