What Are Garlic Scapes, How To Use Them & Why You'll LOVE Them

  • We plant garlic around October and harvest it a good 9 or 10 months later, so why are we talking about garlic in June?
    Scapes! These are an overlooked and misunderstood part of garlic, so I want to talk all about 'em.
    Garlic scapes are the flowering part of a hard neck variety. I like growing hard neck varieties for a couple of reasons, and this is a big one.
    Scapes taste like mild garlic, and you can use them in so many ways!
    Not only do we get something to enjoy, but this will redirect the plant's energy back to the bulb. This helps you get bigger, juicier harvests! If you don't harvest them, you'll end up with a flower that's super pretty but may not be helping you towards your end goal of growing food.
    Garlic can sometimes have a mind of its own, so be on the lookout for scapes this time of year. They're a built-in freebie, so I definitely recommend harvesting them if they show up!

    For some reason, my garlic (multiple varieties) almost all had their leaves die well before they properly bulbed up and started their clove separation. They were well fed and watered...maybe too much water? At least the scapes were good! I'm in NorCal coastal 10a and any suggestions would be welcome. Thanks. 💚

    Scapes are delicious. They are great pickled, freeze-dried they make a great crunchy snack or addition to anything.

    I'm in the northeast and growing hardneck and it's done. How do you get to August in California?

    Can you freeze scapes? Or does it turn to mush?

      Freezing is actually a great idea! Everyone goes crazy on the internet for these things. Imo: just because something is edible doesnt equate to it being delicious. They r woody, stringy and dry. Next year I am going to freeze them and then use them in soups. Also, I am going to try using them in salsa or other dishes that use fresh garlic, when I don't want dragon breath. The flavor is garlic but very mild. Thanks for the idea, even if it was unintentional.

      @shannonz9211 you're welcome! I have a boatload of scapes but its just 2 of us. First year growing hardnecks.

      @Tazzyone. I have a boatload of garlic also. I am going to make my own garlic powder and garlic salt this year. I am going to crush them and dry them in my dehydrator. Then whirl them in the coffee grinder I purchased.
      As for the scapes, I have tried stir frying them and roasting them. I grilled them last year. I realized I just don't like them and cut them in little pieces to throw around my garden beds to try and ward off any critters. But, I feel like freezing the scapes will break down that woodiness and soften it. The "hint" of garlic will do nice in some recipes.

    I planted my softneck garlic in November and harvested them in late April early May. They had mostly died back and some of them were split. I live in South San Diego.
