I had my Switch hooked to a capture card and saved the footage on my laptop.

You can buy decently cheap "switch" USB capture cards that you just plug into your pc for around 20 euros. Works like a charm, very slight delay (only noticeable with something like valor style guard points for the first 5 minutes of playing and then you're used to it already) and has the max quality output a switch can give, so it's worth the money. You just dock the switch, put the HDMI cable into the USB Capture card and have it open on OBS

Do you have any trick to avoid Valstrax's Spinning attack? I want to charge him with my great sword after the spin.

Predict where his head is gonna end up when you see him winds the spin up and stay there. That area under his head is a safe zone and you can just punish him from there.

Dark souls rolls have twice the invincibility frames compared to monster hunter though
