Butter "knifings" should be added on to the dough before sprinkling the sugar/cinnamon mix, the original way of doing the buns!
I think that the tangzhong probably works the same way that a roux does! The cooked starch in the flour expands and forms a gel which can absorb/hold a huge amount of water.
I believe the tangzhong could be classified as a roux...

Use sugar as a pie-weight when blind baking and you get that same awesome caramel-sugar. Just foil-line your pie dough and fill with white sugar & bake.

And I can almost guarantee that whoever Stella Parks is got this tangzhong idea from the lovely Kim-Joy from The Great British Bake Off. On her season they made "Tray bakes" AKA swirled buns of different flavors and she made plain cinnamon buns and described her dough as tangzhong, a technique rather than a flavor agent. It supposedly makes very soft and delicate bread products. I'm excited to see you use it, I've never seen anyone else use it in my age group. 💜

next time, after you roll out the dough into a rectangle, lightly spread on the dough fresh strained bacon grease, then spread on the brown sugar and cinamon :)

I've read something about this. Shakespeare's English to modern English had that usage of 'an' for words with an 'h' and vowel. They treated for example the name 'Helen' as 'elen' thus following the modern grammar rule for 'a' and 'an'. I recall they tried to mimic French as it was the upperclass language or was essentially adapted to English overtime.
In some dialects of England-English, an H at the start of a word is dropped, and "an" is always used before a word beginning with a vowel (as "homogenous" does without pronouncing the H). I would guess that was kinda what he was going for.
