  • Today’s Workshop:
    Learning how to prepare, bake and dehydrate fruits and vegetables for the holiday or any day. The reasoning behind both methods. The best review on the Magic Mill Dehydrator MFD-6060
    SUPPLIES:
    BAKED FRUIT AND VEGETABLES:
    1. Large cookie sheet
    2. Parchment paper
    3. Drying rack
    4. Fruit and Vegetable Choices (Lemon, Lime, Grapefruit, Oranges, Tangerines, Apples, Artichokes)
    SUPPLIES
    DEHYDRATED FRUITS OR VEGETABLES:
    1. Name of dehydrator: Magic Mill Food Dehydrator MFD-6060 purchased from Amazon
    2. Fruits and Vegetables of any kind based on manual
    3. Fruits and Vegetables based on this video (Lemon, Lime, Grapefruit, Oranges, Tangerines, Apples, Artichokes)
    Note: Advertising or any profits from mentioning the Magic Mill have not be rendered. The recommendation was based on helping you to find the best dehydrator for this type of project.
    DIRECTIONS:
    1. Using a small kitchen scrub brush, wash the outer part of the fruits and vegetables to remove dirt and waxy texture. Set aside.
    2. Pre-fill a large bowl with water deep enough to submerge the slices of fruit or vegetables, add 2 to 3 Tablespoons of lemon juice
    3. Using a cutting board and a sharp knife, slice the fruit of your choice approx. 1/8 of an inch, trying to keep the slices whole so you can use them for packaging, garland and ornaments. Working with one type of fruit at a time.
    4. Soak the fruit or vegetable in the lemon water, set the timer for 10 minutes, remove the fruit or vegetable setting them down to drain on a clean dish cloth.
    5. Change the water in between each type of fruit or vegetable. You will notice pits and seeds and other imperfections removed from the fruits and vegetables. Empty the water and fill the bowl again with water and lemon juice to prepare for the next batch of items.
    6. With another clean dish cloth, gently pat dry the fruits or vegetables that are sitting on drying cloth and begin to add them to the dehydrator or oven rack depending on the method of drying.
    7. If planning to use the oven method, begin early in the day. Set your oven temperature to the lowest setting which could be 170 degrees. Prepare a large cookie sheet lined with parchment paper to catch any juices during the drying process. Lay a drying rack over the cookie sheet. Place fruits or vegetables on the drying rack. Fold a dishtowel, prop open the oven door and place the dishtowel inside the door just enough to allow heat and moisture to escape. Set the timer for 30 minutes. Turn the fruit over every 30 minutes for at least two hours to avoid burn marks on the fruit due to the metal of the cookie rack. Once the fruit begins to harden on the outer edges, you may turn the fruit with each hour anywhere from 4 to 18 hours depending on the type of fruit. Timing will need to be noted depending on the texture of the fruit or vegetable. Doneness will be determined by the outer texture and the inner cartilage. There should not be any juices remaining inside the fruit or vegetable. Some stickiness will be noticed. Remove the fruit or vegetable and set on a drying rack for 3 to 4 weeks before packaging to avoid mold. The fruit or vegetable may be displayed in open air as décor.
    8. If using the dehydrating method, place the dehydrator in an open area for proper circulation. Place the fruits or vegetables on the shelves of the dehydrator shifting the racks as needed to fit all items. Set the timer on the dehydrator per manual instructions.
    Follow the oven process with turning the fruit every hour for two hours only. Set the timer again on the dehydrator for the recommended duration based on the manual instructions for the type of fruit or vegetable being dehydrated. There should be no need to turn the fruit or vegetables once drying appears and moisture is being removed.
    Follow the steps for doneness. Remove fruit or vegetables from dehydrator, and set on a drying rack for 3 to 4 weeks before packaging to avoid mold. The fruit or vegetable may be displayed in open air as décor.
    9. Wash all racks, clean dehydrator and oven items.

    I am excited to give this method a try. I make Civil War Era wreaths at Christmas time each year and decorate with natural items available during that time period. We have a large dehydrator that my husband bought from Bass Pro Shop years ago. Thanks you for all of the helpful tips you included in your video. Merry Christmas!

      The oven is good too. I keep it low 180 and I prop door open with a dish towel or hot pad just a slight. Place on cookie rack and turn every 30 min set timer. After 2 hrs. you should not have to turn. You don’t want cookie sheet lines. Bake until no juices are left. If you take out too soon and leave to dry and they are still too wet, they brown faster. Don’t let this discourage you. You can do this.

      Hi Jackie! I having been trying for a while to bake fruit in ways where the color will hold true and finally found a good method, but I have never ventured into testing with an air fryer setting. Typically from what I have read, the air fryer works at a high temperature to allow browning and crisp food quickly which we don't want. With a dehydrator we are pulling moisture out at a very low temp, slowly without cooking.

    How long can you keep the dehydrated fruit? Can you keep it from year to year for your Christmas tree

    • @WhiteDormouseArtisanSoaps
      @WhiteDormouseArtisanSoaps  Рік тому

      Hi there! Make sure they are thoroughly dry because it can be deceiving. No stickiness. Add them to a clean plastic container and seal tight. They should keep for a little over a year. Lemons and limes will darken after 6 months and grapefruit may turn deeper in color after a year. Apples do very well. It is a trial and error method. Don’t get discouraged. If you see something went wrong, figure out what it was and try again. Do not put in plastic container for at least a week.

      I have inserted dried oranges in my flower arrangements, in a bowl of potpourri and many other things and they have so far lasted two years. My artichokes also two years. Just make sure the meaty part of the dried fruit is really dry. You should not be able to push down on it and it should not be moist at all. It will also dry more on its own if left out to air. If your absolutely sure they are dry, you can store them in a plastic container and the fragrance is amazing. Especially the lemons, limes and grapefruit. It’s all delicious.

    If you poured a little lemon juice on the slices before drying wouldn’t that help keep some of the bright color? That’s how we help foods when canning to keep color.

      Hi there! I have not watched the tutorial in a while, but do speak of water and lemon juice to keep the dried items colorful, but do not dot them with lemon juice before going into the dehydrator or oven. The acidity is just dreadful over time. I still dehydrate to this day at least twice a month. You can go to whitedormouse.etsy.com to view some pretty garland made with dried fruit. It’s a real pleasure. I hope you have some good luck dehydrating or making oven baked fruits.

    • @WhiteDormouseArtisanSoaps
      @WhiteDormouseArtisanSoaps  3 роки тому

      Hi! The oranges could take up to 10 hrs. Smaller fruits like lemons and limes could be 8 hrs. Start out with 5 hours on the timer and keep adding time until the inner fruit slice is dry.

    Electricity is very expensive here in the U.K. Would be grateful if another drying method is used instead

    • @WhiteDormouseArtisanSoaps
      @WhiteDormouseArtisanSoaps  3 роки тому

      Hi there! Food dehydrators tend to be much more energy efficient than ovens. I have tried both methods. Please contact your utility company to inquire. I'm sure they will be happy to compare. There should not be a huge hike in electric running a dehydrator. In 2019 it has been noted a cost of between .29 cents and $1.20 is the average cost to run a dehydrator for a ten hour period in the US so I think it's worth it to inquire.

    Can you explain about the towel in the door of the oven

    • @WhiteDormouseArtisanSoaps
      @WhiteDormouseArtisanSoaps  Рік тому

      Crystal, I am so sorry for not responding. For some reason I am not getting some of these messages. I will have to look into it. I prop a towel inside the oven door when baking fruits in the regular oven because the oven heats to the lowest 170 and it still may be a bit too high. By allowing some of the heat to escape, we are able to heat the fruits at even a lower temp. I hope this helps. If you have any other questions, please feel free to ask.

    how do you know when the whole oranges are done

    • @WhiteDormouseArtisanSoaps
      @WhiteDormouseArtisanSoaps  2 роки тому +2

      Hi! They will start getting a bit smaller and turning darker in color. When you give them a little squeeze, they will feel a bit firmer especially inside. They will need to be pulled out of the oven before they get brownish in color and dry out the rest of the way by themselves. The inside of the small, whole orange will still be wet so they have to sit out for a few weeks until you don't feel anymore wetness inside that orange. These are tricky so pull them before they brown. They will eventually be rock hard.

    • @loveiselasticcreations3663
      @loveiselasticcreations3663 2 роки тому +1

      @@WhiteDormouseArtisanSoaps Thank you. I left mine in thinking they would dry out that way. I have brown half dried foot balls.
      Question… How do they not mold?

    • @WhiteDormouseArtisanSoaps
      @WhiteDormouseArtisanSoaps  2 роки тому +1

      @@loveiselasticcreations3663 they are not easy. Don’t give up. Follow how I slit them. Dehydrate or oven cook. You need to pull them out just as they are turning ever so slightly brown. We don’t want them brown and don’t want them undercooked either. Allow them to sit on a drying rack even if it takes one month. The flesh of the orange inside will dry with the air. It will shrink. These are meant to make ahead because they are so full of the fleshy orange that they need to air for a while. They will get rock hard and turn deep Orange color. They are used to string through garland as decor but don’t look pretty on a bowl. Still worth making. I can’t stress enough that any video where someone puts these fruits right into a jar is just not happening. One drop of moisture from the citrus will cause mold if closed in a container. Dehydrated fruits should sit still in an open plastic container and turned once or twice a week to air dry. Any bit of moisture after you think they are done goes right back into the dehydrator again. Funny when you sell them people think it’s maybe a lot of money, but they don’t realize it’s time consuming. I love them anyway. Let me know if you need further help. Remember what I said about the fruit slices. If you think they are done let them sit out a few hours. If you touch them and you still have moisture on your fingers, back in they go for 30 min more until pretty dry. You can do this.

      Hi Kathryn, thank you for your input. I try not to respond too much to comments that make me feel uncomfortable, but I appreciate that the echo bothered you. I'm not a TV host or have camera's or staff. I do this all on my own just like many other people. I learn when I don't like a video that someone made, I by-pass the thumbs up or down and don't comment because I know they must have tried their best. Being such a positive person, I do hope that you stayed long enough to see just how wonderful and easy it is to make your own dried fruit. I think that's what my goal was.
