Superb work. I really liked this one. I have seen a couple of workshops about the topic and this somehow rang some bells. I don't really do sentiment analysis but do a lot of text mining within my financial analysis and reporting. I really liked the function of untoken_... and wordclouds. Applying this in the future can enhance my data cleaning/wrangling process. a good question was raised here and might look into it if I can find Arabic dictionaries for R.
I don't have any knowledge of Arabic dictionaries. If a search engine doesn't turn up what you need, you might post a query to an r-specific community such as community.rstudio.com

I googled the phrase "Spanish sentiment analysis" and did find a few resources that might be helpful. But it might be even more helpful to use a Spanish version search engine with the phrase "análisis de sentimientos en r". I hope that helps.
