Love this map, great vid @Lethamyr ! I'm a game dev, I'd personally re-balance a few things:
1. If the ball bounces off the rim, it'll only be "dead" if not travelling upwards afterwards. So rim hits would be valid (and powerful) as long as they go up to some degree. You could trivially tweak the math to make it fair. E.g. It has to be travelling 3mph upwards, or 10, or 20 etc. Your vid highlights the fact that the game-mode loses a lot of momentum to "rim" losses.
2. Remove the double bounce rule by adding enough power to the ball on each bounce to ensure it flies for a few more seconds. You could even add power to the ball DEPENDING on if the bounce is at a shallow angle, to make it a little bit of a boomer mode hybrid. Skimmer shots would be insane.
3. Give each team a timer. 10s (tight) or 20s (forgiving) to return the ball (recommend 14s). Better than the 3 touches rule (as RL often has lots of micro-touches), and adds real pressure to the team.
Cosmetic:
4. Is it possible to use the Dropshot ball? And change its color in code? That would make it clearer who's team needs to touch it.
5. I'd add another cosmetic circle on the ceiling the same size as the spike circle.
The first idea is the only one I don't like because that's a big rule in spikeball

This was so much fun to watch. It's actually funny, because in one of AppJack's recent videos, he said he was burned out doing 1's against the same 3 opponents, and I suggested he reached out to you to try some fun game modes... Clearly, he was already 1 step in front!

6:50 currently in case this comes up, just thought about a strategy, if someone "fakes" or goes for bumps, it might be a strategy to try to snipe your opponents with the ball for penalties, if that makes sense.

More consistency. The ball goes where they actually want it to, and even when it doesn't, they recover properly and in time.
